Oga's Cantina

I ended up moving our Oga’s reservation to 6:45. That should work better and if we get out of Oga’s early we will just wander around and enjoy the ambiance of Galaxy's Edge.

Move your Oga's to after 9:00. The rest of the park is closed, so you're maximizing your time.

I did this a few days ago. Oga's was really chill inside, had some great conversations with a bartender and a neighbor. And, when it was all over, I got a personal security escort (with 3 others) to the entrance of the totally empty park.

Wow, they escorted you out?! I’ve done after hours Oga’s at WDW several times, and we casually strolled out on our own. Even an hour after parks close there were still loads of people lingering and taking photos. I always felt bad for the CMs who were probably jonesing to tell people to hurry it up so they could close up shop, so maybe the escort is not a bad thing!

My reservation started at about 9:25/9:30. And I was there at least an hour. So by 10:30, the park was completely empty and, yup, security guards walked us all the way to the exit.
 
I had a 3:15 PM reservation on 8/31 for 2 - checked in 15-20 minutes early, didn't get our "standing spot" until 3:30. Took another 20 Minutes to get our beverages, asked for the check then and cleared out. The family we shared the table with we held to the 45 minute rule. I am glad we did Olga's, but honestly it's a one and done for us. It was absolutely crazy in there! As some other posters stated, perhaps the end of the night is the best time for an ADR, during the day I would allow some extra cushion time for an ADR.

Granted, call me a Star Wars purist, I saw "A New Hope" in the theater in 1978 so my Star Wars fandom goes back a bit, we just didn't "feel it" for Olga's. JMHO - Having said this, I think any Star Wars fan should try it!
