Not sure where you saw that. In the terms and conditions it states
"Stays must take place (beginning and ending) between Thursday 08 November 2012 and Thursday 07 November 2013 inclusive. Availability of dates differs from hotel to hotel, and exclusions apply, subject to availability. "

On the basis that you physically cannot book a date that far ahead on their website. Currently, the furthest date in the future you can book is 9th October so, presumably, you can only book approx 360 days in advance..

I must assume then that as you can phone to make a booking then that must be the method of booking that far ahead

The special prices are available on the site and you bring the voucher with you to confirm the price so there is no money back
