I will be in Rome with a group of HS student and their parents just after Christmas. The chaperones have the night of NYE off. We've been searching in vain for something for a group of about 20 parents. Anyone have a tip or two?

Totally off topic (and borderline snarky...), but my first thought was why are the chaperones off on NYE? I'd think that'd be when they're needed most for high schoolers...

Kids will be at a dance supervised in the hotel by band directors and a security guard. The whole thing is organized by a tour company, and there are multiple high schools in the same hotel. The band directors are all on duty, along with the tour people and security.

New Year’s Eve is usually celebrated in Europe with fireworks by the main town center, whichever one that might be in Rome. I myself am heading to Athens next week last minute and wondering if I’m gonna find a place to go for dinner this late. I would just go for a nice early dinner and then search online where a lot of the outdoor stuff is happening.in Europe, New Year’s Eve is a bit different and most European cities people at midnight leave where they are at and go out into the streets to shoot off fireworks or watch fireworks and wish everyone nearby. Happy new year. I would assume Rome ticks that way too.

I would search the web and see if they do fireworks near the Colosseum as a backdrop that would be really cool to see

That's how they do it in Krakow. There are fireworks and music in the main square (which is, btw, amongst the largest in continental Europe).

Usually there is a big event at Circus Maximus, which would put you in close vicinity to the Colosseum as well. The only thing I would suggest is to be relatively close(walking distance) to your accommodations -it will be extremely difficult to get a taxi/rideshare as the night goes on.
