Off peak times

My 2 kids eat breakfast around 8am, lunch 11:30am, and dinner at 6pm or so. Are these busy times or considered off peak times at WDW restaurants?

I would definitely call those peak times - all 3. You might do okay with 11:30 most places, 11-11:15 would be better.

6 PM and on becomes prime dining time. And 8 AM is definitely busy at the resort eateries.

We try to eat lunch in that 11:00-11:15 time frame (arriving @ the restaurant), dinner around 5:00-5:30. Breakfast we don't usually do much for - or eat something in the room, or after we are in the parks, or have a late in the morning TS reservation as kind of a brunch.

Yep, definitely peak dining times. But that's OK, as long as you're prepared for the crowds. If doing CS meals, you might want to pick the larger restaurants since they'll have more cashiers available. If doing TS, make sure that you have your ADRs and show up about 15 min. early.

A non-peak time for dinner would be 3:30 or 4PM. Or 9PM or 9:30PM.

Breakfast non-peak time is 7AM, maybe 9:59AM. I think most breakfast times are over by 10 or 10:30.
