Odd Question - Last day

So I have a bit of an odd question. We are going on the Fantasy the last week in April. It will be myself, husband, 7 year old and 2 year old. We fly back home the next day, Sunday. We would love to go to Universal on Saturday. However, we are purposefully using Disney transport to and from the boat so I do not need to bring car seats. Is there an easy way to get to Universal from the airport (staying at MCO Hyatt). We could rent a car but we would also need to rent a car seat. Are there any shuttles? Thanks as always.
