Palo Souffle

Ingredients

3 TB butter, plus more for greasing the souffle cups
6 TB sugar, plus more for dusting the souffle cups
1 cup milk
3 TB all-purpose flour
3 TB Dutch-processed cocoa
2 oz. (2/3 cup) semisweet or bittersweet chocolate, melted
4 eggs, separated

Method

1. Preheat over to 350ºF. Set a full kettle of water on to boil.

2. Butter six 4-oz. souffle cups and coat with sugar; set aside.

3. Bring milk to boil in small saucepan. Meanwhile, melt butter in medium saucepan over medium heat. Add the flour and cocoa to the butter and beat with a whisk until it has a smooth, paste-like consistency. Reduce heat and cook for one minute.

4. Slowly add hot milk, whisking until smooth, then blend in melted chocolate. Let cool for five minutes, then stir in egg yolks.

5. Beat egg whites in separate bowl until frothy. Slowly add sugar, 1 TB at a time until glossy peaks form. Stir a heaping spoonful of egg whites into the chocolate, then fold in the remaining whites just until combined.

6. Pour the batter into prepared cups. Place cups in large baking dish and add enough boiling water to reach halfway up the sides of the souffle cups.

7. Bake for 20 minutes. Serve immediately with warm vanilla sauce.

2. Combine 3 TB sugar and 2 small egg yolks.

3. Add 2 spoonfuls of boiling cream to egg mixture and stir well, then pour back into the remaining cream and continue to cook over low heat, stirring constantly for 3 to 4 minutes.

DH reports to me last night that he actually has to go to Madera or work on Thursday as his company is setting up equipment at a winery there. He would like to know if we could be ready to leave Wednesday night for the ranch - since he says it makes more sense not to come all the way back home to turn around and go back down. (theres that engineering mind at work again) (ok fill in info - the ranch is 20 minutes from Madera and is where we are going for Christmas, Madera is 2 hours south of here)

Um...honey...That would be tomorrow.... :earseek: :scared1: :scared: :crazy2: :headache: :faint: :faint:

Let's see...laundry, wrapping, packing, christmas cards, shopping....IS HE KIDDING??!!:faint:

I am really to go "Christmas with the Kronks" right about now. Skip Christmas and book a darn Disney cruise every year for the forseeable future.

Anybody with me.?

Okay...riddle me this...I have now done 40 cards...have 63 left...(only ordered 100..guess they tossed in a coupla extra)...but in a box of envelopes, which is supposed to be 100...I only have 36 left!! :confused3 :confused3...should have 60 left...actually I kept 2 cards for us, so should have 62 left...

ummm....errrr... Cheri: PLEASE TO KEEP YOUR GREMLINS AT YOUR HOUSE AND AWAY FROM MY ENVELOPES!!!

Also on the missing list: one book of Christmas stamps that I just bought...now gotta go out in rain, and buy more...oh well, had to go out and fax something anyway.... :rolleyes:

we did....VERY good..Kate wants a Narnia room...

There ARE some intense scenes, but Kate was ok..she covered her eyes

Well I have just over 10 months until I cruise again, but I can say this:

34 days till WDW and a preview ride on Expedition Everest roller coaster! WOO HOO!

Okay, I had to be excited about something since I have lost my DCL Christmas Cards, screwed up ordering my replacements (but managed to get them out in the mail yesterday finally) but still did not get enough.
Then no Christmas parade Christmas morning for us....waaahhh.

But hey--my Christmas tree finally went up yesterday (FINALLY!)
