October 2015 Trip Strategy - Any tips on this plan???

We're going to WDW Oct. 16-26 2015. This is our second trip as a group but the first with a child under 3. Our group consists of me, my husband, my dad (65) & our 3 kids ages 8, 6 and 1 at time of travel. So far, I have the days worked out based on the operating hours posted and the Touring Plans website. I'm finalizing my ADR choices as my 180 days is this Sunday. If you have any advice or tips, I'd really appreciate it!

Oct. 16 - Arrival day, just relaxing and doing DTD, Planet Hollywood or TREX dinner
Oct. 17 - MK (Crowd Level 5) Adventure Land, Frontierland, Liberty Square and a couple rides in Fantasyland. Hoping for Crystal Palace breakfast to be in the park before opening.
Oct. 18 - AK (C.L. 6) focusing on Asia, Discovery Island and Dinoland. Doing Wilderness Explorers. Rainforest Café lunch/early dinner.
Oct. 19 - MK (C.L. 5) Fantasyland, Tomorrowland, SotMK/Pirate's Adventure. Be Our Guest dinner if I can manage to get a ressie!
Oct. 20 - AK (C.L. 3) Africa, Rafiki's Planet Watch, Wilderness Explorers. Tusker House Character Breakfast if I can get it. Leaving park (hopefully) around 1 pm to go back to hotel to rest and get ready for MNSSHP. Leave for party around 3:30/4.
Oct. 21 - Blizzard Beach/Typhoon Lagoon (may be in refurb, but it's got park hours on the Disney website) We'll be doing breakfast at OPR at CBR. Evening @ DTD w/ Planet Hollywood or TREX dinner.
Oct. 22 - Epcot (C.L. 4-PM EMH) Left half of Futureworld and half of World Showcase, Biergarten dinner
Oct. 23 - Epcot (C.L. 5) Right half of Futureworld and other half of World Showcase, San Angel Inn dinner
Oct. 24 - HS (C.L. 7-AM EMH) Trying to do the whole park in one day as we were pretty much able to do so on our first trip. Now that Backlot Tour is gone and FP+ is in, hope to squeeze everything in if TP is spot-on. 50's Prime Time late lunch/dinner, trying for Fantasmic as it was cancelled last trip due to weather.
Oct. 25 - MK (C.L. 2) This is the one I keep see-sawing over. Originally had it as HS, then changed my mind to make our last day at MK. Hoping to get O'Hana Character Breakfast and take monorail to MK at park opening.
Oct. 26 - Departure day, no park, just packing and relaxing at resort.

Any thoughts on my choice for AK on our MNSSHP day? Do you think this is a waste of a park ticket day? I chose to do the WP the day after so that we won't need to get up so early and we can relax after being out late the night before. We have 8-day tickets, no Hopper added, but do have the Water Park Fun and More added on. Really feeling the heat now that ADR window is closing in on me and I need to have my days figured out. Getting the feeling that my ADRs will not work out for me and I'll have to do a lot of switching around...Any suggestions, tips or reassurances are greatly appreciated!!!:)
