Any must dos to make sure we do? Want to make our 10th anniv memorable. Also 1st trip no kiddos! TIA
 
Another vote for the spa. Beyond that, it kind of depends on what you like to do. Sunset dinner at Ama Ama perhaps? Long walk holding hands?
 
We took a drive around the island. Highway 1 through the mountains, a couple of beaches on the east side, the Temple, the amazing waves at north shore! One thing to be prepared for - we went in February and while we wore shorts, the ocean water was almost too cold to be in very long except during the very warmest part of the day. It wasn't a huge issue for us, but it is something to be aware of.
 

January is a good bet for huge waveson the North Shore . Check the local surfwear store they will often have surf reports. Waimea Bay is great but it needs to be over 15' before it breaks. The best stop is the Banzai Pipeline, known as Ehukai Beach park, it is a beautiful spot and the waves break real close to shore so you can see the surfers. It is across from a school. Sunset Beach is also a good place. These are look only places, far too dangerous to go in the water

Bring a good map, these places to not have signs, overall in general Hawaii does not have signs.
 
I would suggest making a list of indoor activities to fall back on just in case it rains a lot on your vacation. Some to consider would be Bishop Museum, Iolani Palace, Windward or Kahala Mall (fewer chain stores than other local malls), afternoon tea at the Moana is under a covered lanai, Honolulu Museum of Art, and Shanghai-La.
