A friend joined me for a few days during RADP 10/Mousefest and she had a couple of the old 7-Day PHPs that she and her husband had used on a previous trip in May. (They were purchased at a military base that was still selling the old passes). During their May trip, the tickets worked as they were supposed to, they never had to put their fingers in the scanners.

They each had 3 days left on them.

The first day of entries for this trip at Epcot and Magic Kingdom they worked exactly as they were supposed to, she entered the park and no biometrics. On her next day, she entered Animal Kingdom and the entrance turnstile asked for her fingers. She told the greeter that these were the old style passes. The greeter said she needed to put her fingers in anyway. She did and from then on that pass required her fingers in the scanner.

So some turnstyles may be set to "record" the biometrics on the old passes and then require them for future use.

Effective approximately June 2005 pre-2005 park hoppers are part of the ticket tag or finger scan or biometrics system whatever you want to call it. A finger scan is recorded upon the next usage. If the turnstile(s) was(were) not recording finger scans at that moment, the finger scan recording is deferred to the next usage after that.

All park tickets are using biometrics now. It may be that the park that day was busy and biometrics was turned off to speed up people through the turnstiles.
