Not to be missed on every trip (assuming the attraction is running):
RSR
Splash
Big Thunder
Indy
Pirates
Soarin'
Cali Screamin
Grizzly River Run
Space
Star Tours
Toy Story Mania
Haunted Mansion
Tower of Terror
Peter Pan
Alice in Wonderland
Jungle Cruise (sort of a tradition for us)
Small World (sort of a tradition for us)
Little Mermaid (almost always a short line and DD loves it)
Winnie the Pooh (same comments as Little Mermaid)

Can live without doing every time (but will always do some on every trip):
Matterhorn (too bad it's so uncomfortable, otherwise it would be on the first list)
Nemo Subs (too slow of a loader for the overall quality of the attraction)
Fun Wheel (same comment as Nemo Subs)
Mater's Jamboree (same comments as Nemo and Fun Wheel)
Autopia (at least in a few years when DS outgrows it)
Roger Rabbit
Buzz Lightyear
Monsters Inc.
Tarzan's Treehouse
DL Railroad (although we'd try to fit it in every trip because it's so iconic)
Aladdin show (but definitely worth doing at least once)
Anything in Bug's Land
Mr. Toad (although we'll probably always hit this if we get to Fantasyland at rope drop)
Snow White (same comments as Mr. Toad)
Pinocchio's Journey (same comments as Mr. Toad and Snow White)

This one is hard because my favorite, Splash MT, seems to be down often when I visit DL or WDW. That's because many of my past trips have been Jan/Feb. Of course, this years refurb on Splash was particularly long and ugly. And I didn't think I could do a trip to DCA without hitting Soarin', but again with this year's Refurb Extravaganza, missed that one. And I learned that I could live without these rides....though it made for less memorable trips, that's for sure.

Funny,

my son LOVES Buzz Lightyear and we do it like, 4 or 5 times/day.
I love Aladdin show and can sometimes watch it twice in a trip
I love ALL the scenic slow stuff (Mark Twain, Columbia, Train, Main Street Street cars) and will try to hit them all up at least once.
We usually spend half a day on Pirate Island playing in the caves. My son, again, LOVES pirates and just loves running around the island.
This is a must do for us.
 
Whatever my girls want to do is our not to be missed! I love watching them on the rides and at the shows.

I can't begin to include it all, but some of our must do's:

Animation Academy - my DD5 is a little artist in the making and can spend hours here, and little sister loves dancing her heart out to the music in the hall area, so it works for all of us.
Bug's Land water play area (in the warm months)
Ariel for DD3 - she likes to ride it over and over and over....
GRR for DD5
Aladdin for DH - he loves that show
Paradise Pier games for the girls. Wish they would get new toys! lol
Meeting Daisy, Minnie, or Stitch and getting out free Visa Card photo M&G
Monster's
Ice Cream from Ghirardelli
Sharing a chimichanga and sitting on the curb in the Hollywood area of DCA and people watching

Gosh, I'm glad I'm not the only one. And I *want* to like it--I get why it's important both historically and in terms of Disney history. But I feel like I'm enduring a flashback to elementary school, when I'd just want a presentation or educational film to be *over*!

Our must-do's include, but aren't limited to:

Matterhorn (yes, it hurts, but the kids and I love yelling "Yeti!" at the yeti)
Big Thunder Mountain Rail Road(my favorite ride in the parks)
Mr. Toad's Wild Ride (DD10 wanted to be called "Toad" when she was little, and everyone gets nostalgic just waiting in the queue for it)
CS (DD10's fav ride)

Star Tours (probably DS7's fav ride)

Splash Mountain (fav ride for PP+ pics)
HM (especially NBC version, for DD10, who loves that movie)

Things I'd rather skip (but I'll do them if the kids or DH wants to do them):
Lincoln (as mentioned above)
Pinocchio (really unfulfilling, and I've rarely met a dark ride I didn't like)
Tom Sawyer's Island (I like the idea of it, and I always do it for the kids, but during the actual execution of it, I usually just end up tagging after DS and DD into some very narrow cave and wishing I were not in a very narrow cave and then losing them and then finding them climbing some rocks and then hearing a CM ask them not to do something like jump off high rocks. Last time, DS7 was wearing a fuzzy white Olaf costume and slid all the down from the top of some rocks on his bottom--and then walked around the rest of the day with brown/grey fuzzy bottom.)
Jellyfish (you blink and it's over)
Autopia (don't like the long line or the exhaust smell, but DS, of course, loves the idea of driving a car!
