But I want to go in to AAA today or tomorrow and book my trip for next year (easiest way for me to pay for it). The thing is, we are doing 7 nights, 8 days with park hopper, water parks and the dining plan. Should I go ahead and book all of that now or should I just book the room and basic MYW tickets in case there is some kind of special that comes up for next year? I don't know that there are ever any deals that come out for the end of June so maybe it would be easier to just do it all now.
 
I would ask your AAA travel agent if they are willing to make changes for you. You can not have both the AAA discount and a WDW discount code (choose one or the other).

We booked through AAA because we needed the package so we could get the dining plan. A week after we booked it, WDW released a discount code and our AAA agent changed our reservation for us - we saved a few dollars and now we have the water parks and more option for "free"!

So my answer is that your AAA travel agent should be able to change your reservation if a discount comes out, but you need to find out if they are willing to do it! I don't see any reason not to book it the way you want it in the first place. I guess I'm not seeing how that would help...
