Sugar and Beech Mountains are the biggest resorts, for what that's worth.
Also, are you planning to fly or drive? If you're flying, then I would definitely recommend going out west to ski. It's not all that more expensive (other than the transportation) - the lodging and lift tickets are about the same as many of the less flashy Colorado or Utah ski areas. The skiing in North Carolina can be kind of iffy, as far as snow quality and quantity.
BIL & SIL just got back yesterday from skiing Sugar and Beech....I haven't talked to them yet, but when I do, I'll get a full report and pass it on to you!
Things are looking good right now for Sugar and Beech. If you do decide to go to that area let me know and I'll see what I can tell you about the hotels you are considering. I am most familiar with the Boone area.
