I would subscribe to touringplans.com and go to the crowd calendar for your timeframe.
Then you can plan which park you will go to on which date based on the predictions for the lowest crowds.
Then book your dining.
At AK, my fav TS is Yak N' Yeti. For CS I like Andupar Cafe which is the Yak N' Yeti CS and my kids love the Pizzafari.
At DHS, we like Sci Fi Diner the best for TS, followed by Mama Melrose for TS. Sci Fi Diner doesn't have the best food but the atmosphere is cool. For CS I like the ABC Commissary for their cheeseburger with the fried shrimp on top. My kids like the Pizza Planet.
At MK, it's a tough one because we sort of like the Crystal Palace Buffet at lunch but it's so darn loud. I've had good food at Tony's Town Square and bad food there too.
For CS we love Starlight Cafe, Columbia Harbour House but for burgers it's Pecos Bill all the way.
At Epcot, loved Chef De France, Via Napoli and Le Cellier for TS. DD and I loved Tepan Edo but the rest of the family didn't. Hated restaurant Marrakesh. For CS in Future World, Sunshine Seasons is great. For CS in World Showcase, we've loved everything we've tried so far.
I haven't eaten at too many of the resort restaurants. I did try Boma at AKL and loved it and O'Hana Breakfast at the Poly and loved that too. We also enjoyed our meal at the Whispering Canyon Cafe at Wilderness Lodge but that was more for the fun than the actual taste of the food.
Getting to the resort restaurants can be tricky sometimes if you don't have a car. We usually try to book one of those near the park we are at or just take a cab to it.
This turned out to be longer than I thought it would be but maybe it will help you. Oh and yes, because you are going during free dining, I would book ADR's. Otherwise you may find it trickier to get somewhere to eat TS.
