Noob, planning a trip - Need some help

Ok, some we are planning on going to WDW in Aug, 2-16, we enjoyed Charlie so much last year off-site thought we try again this year on-site.

So my question is can you get the 10day myw ticket and the dinning plan for 10 days to? or is the dinning plan just good for 7days?
Or would I be better off getting the AP (to save on hotel) for one of us, and 10 day myw tickets for the rest and just paying for food normally?
There is 3 of us, Me, DW, DD under 5

ANy ideas or help would be appreciated.

what i've done for our previous trips is to make a spreadsheet analyzing all the variables... sometimes this is done on scraps of paper as i get prices on the 'net, other times i have actually entered the info into a table in word...

basically add up different combinations based on what your needs/wants are... guestimating your food costs (based on how you do disney)... etc...
