The non-swimming activities for you would be:
Relaxing on the beach. There are lots of chairs you can lounge on, or you can put a chair in a shady spot next to the pool and read a book. Choose some place near the snack bar - then you can make your kids refresh your beverage on a regular basis!!!
The sting ray pool. This is a "wade in up to your waist" pool, although you can go in just the shallow part, too. But no swimming needed. You just wade in and the rays swim around you. It's so much fun!!!! Not at all scary or threatening - the water is clear, the rays are small, and the whole experience is fun and cool. I did it about 4 times during the day and I'm a 49 year old woman with no adventure genes at all.
The aviary - if you can get there without going in the water, you can see all the birds and animals.
The pool - lots of shallow spots on the edges to stand in, or to sit and let the water come over your shoulders.
If you can use a swim noodle, you can go all the way around the lazy river on a float. See a lifeguard and ask what your options are - I went around and around on the lazy river, although I am a good swimmer - it was beautiful and very relaxing!!!!
The "snorkel" pool. You could put on a mask and snorkel and just put your head under the water. Snorkeling is basically lying on top of the water floating, so you might be able to do that. It was a beautiful and amazing experience. I had never done it before, so it was a great environment to practice in!!! Can you float at all? Maybe your DH could help you to learn a little about your limits at the edge of the pool.
The food - there are snack spots to t =ake advantage of - no swimming required!!!!
We had a lovely day and are going back this summer - can't wait!!!
