Can someone suggest some fun yet inexpensive things to do on days you don’t go to the parks (besides Disney Springs)? Thanks!
 
Tour the monorail resorts. (,My kids love the monorail for some reason) wagon ride.at Fort Wilderness.
 
Go to Fort Wilderness by boat and check out the horse barn, walk to Wilderness lodge to see the geyser. Animal Kingdom lodge has schedule of activities, most of them free, as well as animals viewing.
 
AKL has TONS of stuff going on aside from the animals. As mentioned FW is really fun, mini golf at winter summerland or fantasia, walk around the boardwalk in the evening and catch the street performances, movies and s’mores at the resorts.....
 

- Free culinary tour at AKL and checking out the public animal viewing areas
- Monorail resort tour, if at night watching the HEA fireworks from Poly beach
- Walking around the Epcot resorts area, getting ice cream at Beaches and Cream or Ample Hills
- a lot of resorts have campfires/night time movies, best of which is at Fort Wilderness that has the Chip n Dale Sing Along
- Wilderness Lodge resort tour
- walk the trail between Fort Wilderness and Wilderness Lodge and explore both resorts
- Mini golf
 
The campfire singalong with Chip and Dale at FW is a lot of fun and free. Explore the resorts, rent the little water mouse boats at many resorts, rent a bike or surrey bike at many resorts, explore the LEGO sculptures at DS, also the free art/animation class at AoA (used to be at DHS)
 
Also, at Grand Floridian usually around 330 every day, Cinderella and Prince charming come down the grand stairs and dance and invite the guests to dance with them. It’s free and fun, and unadvertised so usually not a lot of people there for it
 
I would like to recommend the Wilderness Lodge resort tour. We enjoyed it very much.

We've also visited the AoA resort and enjoyed a free animation drawing lesson.

The behind the scenes animal tour at Rafiki's Planet Watch requires admission into AK, which would defeat the purpose of the OP's question.

I like resort hopping and touring the boardwalk area by boat.
 
On our non-park days we do the resort pool for a bit and the hit mini-golf. We also like to tour and dine at one or two of our favorite resorts. Take a monorail ride around the lagoon and see the resorts, take pictures, find a quiet spot and read the paper.
 
As others said - we love to go the the Boardwalk - at night they have entertainment. We also love to go to AKL and watch the animals. When the kids were younger - I would make a scavenger hunt around the resort or resorts when we stayed at the MK resorts - and take the monorail to go to the other resorts.

We also love to go to Fort Wilderness. Trail's End is a great place to eat that is not that expensive.

Is the culinary tour still happening? I called Signature Services at AKL and they weren't sure.
 
We sometimes go spend a few hours at "Gatorland". I think it cost about $30 for an adult. It may be more than you would want to spend. We enjoy it.
 
There is a lot to do here... or do nothing at all... depending on how long your staying your might want to just sleep in, hit the pool, nap and visit some of the other resort if the mood strikes...

All the previous suggestion above are what I would have suggested...

See what adding one day at one of the water parks might add in...

Are you wanting to or thinking about leaving the resort area? and do you have a car? Ubering is a way to get around, there is a nice outlet mall not far from the Park... if you were wanting to do some shopping... There are 2 solid outlet mall here...either one would work out great.... You also could go over to I drive, and the eye over Orlando, mini golf, and Wonderworks...lots of place to eat you can check out Groupon for some deals... If you have a car... head over to Port Canaveral which is home port to some of the DCL ship, lots of beach to check out... or go over to Cape Canaveral for the day... They run offers/deals sometimes...again Groupon might offer something...
 
We like to do a Disney Transportation Tour. We bus to Epcot, then hop the monorail to MK. Get off at the TTC and take the ferry over to MK, then take a boat to Wilderness Lodge. Have some lunch, then head back to MK. You can ride the monorail some more, or take a bus to POFQ (or OKW) and then take a boat to Disney Springs. From Disney Springs take a bus to BWI/YC/BC and pick up the boat that sails from there out to DHS and back around to the International Gateway. We like riding the different forms of transportation, and still feel like we are at Disney, although we are actually spending much of the day off our feet, resting. Of course, there are numerous opportunities to stop for meals, snacks, and refreshing adult beverages!
 
We always take a non park day, we rent a boat even if its just a little mouse boat. I love shopping at the monorail resorts, or going to the Boardwalk. I would like to possibly go to FW this trip and check out the horses, maybe even horse back ride..

Touring resorts is always fun, especially if its a resort you haven't stayed at yet, maybe get a snack at their food court that isn't available at your own resort.
