Non-bread maker whole wheat bread recipe?

I've been wanting to try making my own bread for a while, and after my success with pizza dough this weekend, I might just have worked up the courage to try. I love to cook, but making bread from scratch has always been one of those things that seemed intimidating to me.

No breadmaker, and I'd prefer a 100% whole wheat recipe without dairy... any suggestions?
 
I just made wholewheat bread about an hour ago and its so delicious, didn't require more than a few minutes kneading to get a smooth dough and it is so delicious, and slices beautifully for sandwiches and toast, its just awesome!

The recipe is by Delia Smith, our cook supreme in the UK, her recipes are perfect and if you follow them to the letter you won't go wrong!

I can't stress enough how delicious our bread is, I doubt i'll buy store bought again as it doesn't taste anything like this bread. Good luck :thumbsup2

Thanks for the pointer - I saw that one, but almost every recipe was designed for a bread machine or a kitchenaid and since I move a lot and have a tiny kitchen, I really can't afford to add more kitchen stuff to my collection practically or financially. I figure it's safer to start with a recipe designed to be made by hand, and then start adapting other ones after I have some experience!
 
handhot water just means water that's hot enough for you to keep your hands in, so lukewarm I guess.

It really is yummy bread, just had a small sandwich for my breakfast, yum yum!
 
Here's my all-time favorite:

Bread in a Bag

1 gallon ziploc bag (ok, so you don't really need a bag. You can mix it in a bowl too, but the bag's more fun and less messy).

1c flour
1T yeast
3T sugar
1/2t salt
Mix the above ingredients in a plastic bag.

1c of warm water (125F to activate the yeast)
3T oil or applesauce
Add the above ingredients to the bag. Seal the bag and mix.

Add 1c of whole wheat flour or oatmeal or white flour or your favorite whole grain to the bag and mix again.

Incorporate an additional 1c-1.5c of flour until the dough doesn't stick to the sides of the bag.

Remove from the bag and knead for 10 min

Let the dough rest for 10 min

Shape the dough and put on a greased pan. Cover with a damp cloth.
Let rise for 30 min

Put the dough into a pre-heated oven for:
loaf 375F 25-30min
rolls 375F 15-20min
pretzels 400F 15min
pizza crust 500F 10min, then add toppings

I have a "no-knead" wheat bread recipe at home -- will post tonight -- from the "More with Less" cookbook. It was a great first time yeast recipe for me.
