Non-180+10 Day Restaurants?

Is there a list anywhere of restaurants that are not part of the 180+10 booking period, or restaurants that have a less than 180 day requirement?

Also are there any restaurants that I have to call directly vs. calling the general reservation line where I can book most the restaurants on property?
