No Bean Chili Recipe

Does anyone have a good recipe for chili that does not include beans? I always throw something together but it is always a little thinner than I would like. Any help would be appreciated! :teeth:
 
I sometimes use this recipe that I got from my Cooking with Mickey cookbook. It does call for beans, but I don't usually use them and it comes out thick. It is the bread crumbs added at the end that thickens it.

2 lbs. ground beef
2 1/4 c. chopped spanish onions
1/2 tsp. granulated garlic ( I use crushed)
2 tsp. chili powder
1/4 tsp. ground cumin
freshly ground black pepper to taste
1 1/4 tsp salt
1 T. paprika ( I sometimes use the Hungarian Hot)
2 c. tomato catsup
3 c. tomato puree
3 1/2 c. beef stock or 3 1/2 c. water plus 4 bouillon cubes
3 1/4 c. (2 15oz cans) pinto or kidney beans
1 c. dry bread crumbs

Saute beef and onions in a 1 1/2 gal. saucepot until meat is lightly browned. Add all the spices, catsup, puree and beef stock. Mix well. Bring to a boil and simmer over low heat, covered, stirring occasionally, for 1 hour. Add undrained beans and bring again to the boil. Add bread crumbs and remove from heat. Stir for 1 to 2 minutes before serving.
Note: This recipe can be cut in half if a smaller amount is desired. It also freezes well for future use.
 
I use the same recipe--if I don't want the beans in I just leave 'em out (kids prefer it that way!) If you want to thicken your chili, you can always add a can of tomato soup--makes it nice and creamy too.
 
here is what I use to make a huge 6qt pot of chili..you could eliminate the beans


3 rolls of frozen ground turkey
2 cans tomatoe soup
3 packages chili seasoning mix
1 jar of medium salsa
3 cans of kidney beans in chili sauce
1 can diced tomatoes with green chilis
2 cans diced tomatoes
1 large onion diced
1 large green pepper diced


Brown turkey, onion, pepper in a tiny bit of oil as the turkey has little fat. Drain if you need too. Add all other ingredients,1 can of water (tomatoe soup can,might need a little more water at first ) cook for several hours on low until thickened. Serve with chopped tomatoe, shredded cheddar and a dollop of sour cream.

I am a Aldis shopper and all these ingredients are very very cheap there. Makes a nice big pot and it is very yummy! We use the turkey to keep fat down and since Aldis has the rolled frozen type for 79cents its a bargain.
 

If chili calls for beans I substitute a can of corn. My family seems to like this much better than beans.
 
Thanks for all the good ideas. I took a little from each of your recipe's plus added some ingredients of my own. It turned out great. My family is calling it "Not Really Chili" :rotfl: I don't care what they call it, it is really tasty. Thanks for the help! :goodvibes
