If we book our home resort at the 11month mark then decide to switch to another at the 7month mark, is that an easy thing to do provided there's availability?

Yes, it's easy. If you need to use the same points, you have to cancel the first reservation and then book the new one. You can do that online at 8 am Eastern or you can wait until 9 am Eastern and ask MS to do it.
