Ok, so I'm not sure if this is the right place or not, but I'll give it a shot.
We are a family of 6, 2 adults and 4 children (would be aged 8, 6, 4, and 2)
We are trying to figure out our options.
How does this work? And if we find someone to buy points from, can we get the dining plan and magical express with it?

you would be best off with a 2BR. you might possibly be able to squeeze into a (non-value) 1BR at AKV.

yes. the member would have to set everything up but you can add the DDP and DME with a points reservation. (no "free" dining, though...ever.)

after you have done a little homework, go read the FAQ on the rent/trade board and post your request there. finding a rental soon will give you more resort options. good luck. (just an FYI: your dates will probably be edited out, as this board is not for rental activity.)

The biggest thing to remember is that you are not making a reservation with Disney. You are renting a reservation from an individual so they control the reservation until the moment you check in. You won't be able to call Member Services for any reason, not to confirm the reservation, not to add Magical Express or the dining plan, not to make a request. Only the member will be able to do that.

Plus, should you need to cancel, the member may not refund any of the money you have already paid them. There are restrictions on these points, so cancelling may leave the member with unusable points.

This is a great way to visit WDW, but you have to be willing to give up control of the reservation and give your trust to the member.

As long as your two year old hasn't turned three by the start of your trip, you could squeeze into a Standard or Savanna one bedroom at AKV (it's going to be tight, though). Any other resort and you'd need to have a two bedroom. Only the Standard and Savanna (plus the concierge) one bedroom villas have a single sleeper chair in the living room along with the queen sized sleeper sofa. All the other DVC resorts will only have the queen sized sleeper sofa (in addition to the king sized bed in the master bedroom).
 
I am an owner that recently completed my first retal of points to another Disney Family. We visited back and forth, and I had numerous bites with my rent posting. As I conversed with the eventual "winner", they researched what they would and I researched what I could get them. I questioned them on their choice of a Studio Room with 2 adult couples (kinda squished I would think), but he said that they NEVER stay in there room. Another thing that went well was a contract. There are a couple of example contracts that I picked from and created one. The renter was happy to oblaige to my requests (such as half down at 90 days out), the balance 15 days prior.

I did make their transport reservations and put the renters name and address, but the tickets still came to me. I mailed them to him with time to spare. Everything did go very well for my first time to rent out points.

You have children that may need to take a nap in a bed instead of a stroller. You also think about where you spend the most time, and then try for the DVCs that have all the stuff you need.

If you decide to rent a reservation in the future, you may want to change that final payment to something outside of the 30 days where your points go into holding. If your renter had not paid the final payment at 15 days, you would have been stuck with points in holding if you could not have resold the reservation at such short notice.
 
As Deb and Bill said: If your youngest child is still two at the beginning of your trip then you could squeeze into a studio or one bedroom at AKV (the one bedroom wouldn't be so bad).
However, we have four children (ages 10, 10, 7 and 5) and the two bedroom villa is wonderful. You have three tvs (one for the older children and one for the younger) and a lot more space. If you can at all afford it, get one - even if it is only for a couple of nights.

I agree with the other poster this is a scary....it does benefit the renter and the owners security is gone. What we do is 1/2 down at time of the booking and the balance due 90 days before departure......but the rules change if travel falls beyond my banking window......
