Newbie question here: Our 90 days is approaching this week and I have a couple questions. Does the window open up at midnight? What all can I do on this day? Thanks for all your help!
 
It opens at midnight eastern USA time.

So exactly 00.00.

You can book.

Port adventures
Adult meals Palo and or Remy.
Character breakfasts.
Meet and greets.
Spa
Nursery if applicable.
Boutique if the ship has it.
Cabana at Castaway Cay, if your ship visits Castaway Cay and still available.
Register for children's clubs if applicable, and say set up passwords.

On line check in will also come up, this may not come up exactly at 00.00 it has been sometimes up to three hours later, this needs to be completed, and if you are not concierge then a port arrival time booked.

Note, no money is taken at this time, everything booked will charge to your ship account on the ship, if there is a charge.

You can also pick your Port Arrival Time, put in your room charging info and passport numbers (if you have them) and print out your cruise contract.
 
I'm curious as to whether it's necessary to book any of these things at midnight or if there's still good availability for those who wait til morning. I know for WDW, it's worth staying up if you want certain fastpasses. Is DCL the same?

It is beneficial, Palo brunch for example can go fast, even if it doesn't the best desirable slots and date go fast.
Any port adventures including Doplhins go fast, Cabanas at castaway often have gone in seconds st 00.00 at platinum and by concierge ore booking. Spa on formal nights often goes fast.

The selection is
120 days, concierge have picked direct to shoreside concierge and platinum booked, should still have good availability.
Then Gold 105 days, Silver 90 days, everyone else 75 days. As you progress down this timeline, the availability falls or sells out, so actually , midnight is important, but new cruisers still may find some things gone at 75 days, but may snag the last palo brunch at 00.00 then it's gone.
 
You mentioned you are a newbie. Is this your first cruise? If so your window doesn't open until 75 days before cruise.
