I am so new to this!! I have booked 3 fast pass + today online! does that mean I can not book any more the Morning we get there??

That's correct. The maximum, for now, is 3. You can make changes when in the park by using the app, a kiosk, or the assistance of an iPad CM.

Is there a way to delete just one of the fast passes+?

You can schedule 3 for each day of your stay.
