We will be in the parks 6/5 - 6/11; My kids aren't interested in character dining, are there any "must see" dining experiences that we could still book? Otherwise I guess we will survive on random Disney food...

Depends what you like. My "must eat" list could be entirlely different than the next person's. Plus, at this juncture, you will have a hard time finding availability for any of the more popular TS restaurants. I hope you are not on a dining plan (unless it's the QSDP). If you provide some more info about your family's preferences (are you adventurous eaters, or very basic "meat & potatoes" people, etc), people can provide you with better ideas.

thankfully we aren't on the dining plan so we still have the freedom. My kids are meet and potatoes kids(american fare, italian, basic chinese or japanese)... my wife and I are adventurous. Usually we can find stuff for the kids at any restaurant, we are probably looking for the best atmosphere.
