They could go horseback riding, to DisneyQuest, miniature golfing, swing in a hammock on the Polynesian beach, book a great dinner at California Grille or 'Ohana and watch the Magic Kingdom fireworks from there, go on a backstage tour (that's a way to be in the parks, but not be fighting the crowds), get a nice couples massage at a WDW spa and order a romantic room service dinner, rent a pontoon boat at the Wilderness Lodge and take a picnic out on the lake, go parasailing at the Contemporary, or rent bikes at the Boardwalk and ride around for a bit.
