How can i find what is on and where and how do i go about booking something please?

Epcot has traditionally been the "New Years Eve" Park.

However if wall-to-wall guests is not your idea of fun, I'd not go there.

Otherwise, there is nothing else to "book".
The parks and DTD are open, the holiday (Christmas) events are still going.

Its just a very BUSY BUSY time to visit.
