New To WW - Lunch Help Please!

I'm getting my grocery list all ready for my WW kitchen and my hang up now is lunch. I have only 30 minutes and we have only one microwave in our work kitchen so it's almost impossible to have a chance to use it so that rules out the Smart Ones which were my first pick. ::yes:: So do you have any ideas for good lunch ideas in the 5 point neighborhood that you can serve cold? Any help would be very much appreciated!! :)
 
If you like sandwiches, I use the Butterball or Tyson lunch meats, 97-98% fat free, on 2 slices of Wonder Light bread, and a tbsl of Hellman's Just 2 Good. That's 3 points. Actually, I make 1 sandwich and split it between 2 days, 1-1/2 pts a meal. To that, I add fruit, 1/2-1 pt depending on choice. Also, I sometimes add the Campbell's soup at hand (you'd need a microwave though), the ones that are 1 pt each (2 chicken ones and the 2 vegetables ones). Another 1/2 sandwich choice, is 1 tbsl peanut butter (chunky for me) on 1 slice of Wonder Lite Bread, with the other add-ons. Do you like egg salad? One hard-boiled egg on the same bread, with a little Just 2 Good. (Now I'm getting hungry) :D How about a salad? I'd suggest keeping every separate in baggies until you're ready to eat, with a reduced fat salad dressing, and a 0 pt egg white, it's pretty good! A 1 pt salad (for the dressing), and you could add croutons for another pt.

Maybe with the soup at hand, you could make that at a coffee/bathroom break, when the microwave is free, and just take it to your desk/office?

Thanks so much for all the ideas! All of those are things that would work perfectly for me. I was trying to figure out myself what would work to make a low points sandwich and it's much better hearing how it's done from someone who really knows the WW system. ::yes:: I think I'm going to get some of those soups for snacks and maybe break up my lunch into something mid morning and mid afternoon so I get 5-6 points but just not all at once. :) Thanks!!
 
I like to take a whole wheat tortilla, lean roast beef and baby spinach leaves, put a little low fat mayo on and roll up. I hold it together with tooth picks until lunch time. It is about 5 points. I usually add some raw carrot sticks or cucumber sticks to round our the meal. Campbell's Select have some 1 and 2 point soups. You could heat that at home and bring in a thermos for those cold winter days.

Pop some light microwave popcorn at home to bring for snacking at your desk. And I usually keep some honey nuy cheerios at work for mid morning snacks if i need it. I just eat them dry, like chips or something! :cool1:

It's unfortunate that you don't have a microwave. Having one really opens up the possibilites. But all is not lost.

I have a ww's food scale (the more expensive one digital one-but definately worth it). It measures in grams (alot of food packages list grams) and oz. This is instrumental in packing my lunches.

Turkey Sandwich
I love the Peperidge Farms all natural breads but they are higher in points than the diet breads. Two slices (3 points). Butterball oven roasted turkey breast (in the deli) - 2oz= 2 points. Low fat swiss lorraine - .5oz=1 point. Total 6 points. (could be less if you used less points bread).

Sometimes I take whole wheat crackers (try to find 3g fiber per serving) 8=2 points and 1 oz lowfat swiss lorraine cheese=2 points. 1 serving Stoneyfield Farms yogurt = 2 points and 1 serving pineapple (canned in its own juice) served without the juice =1 point. I mix the pineapple and the yogurt so it sweetens the yogurt naturally with little points. Total 7 points.

These are a little higher but I just wanted to give you some ideas. Sometimes ideas like this will spark other ideas for you.

Here are some other ideas (need a microwave though) for lunch or dinner.

Mission 99%fat free tortillas 1.5 points each with fat free kraft cheese- point per 1/4 cup. Make quesadillas by using pam and grill each side lightly in a pan..........YUMMY.
You can do the same with Pam and bread in a pan to make grilled cheese. Just substitute it for american cheese (more points). For the Quesadillas I usually use one serving of cheese for two quesadillas. So if you only make one use half the cheese at .5 points.

Fat Free refried beans with salsa. Heat the refried beans and mix in salsa (I prefer homemade salsa). You can eat with a fork or make your own tortillas. I take a corn tortilla and spray with pam and bake in the oven till crispy. I also take these homemade cooked corn tortillas and top them with the refried beans and salsa for a great tostada. You can add fat free cheese too, but I prefer it without when using salsa.

Tuna patty or salmon patty.

1 can of tuna (or salmon-more points for salmon there are small pouches of salmon out there now in smaller individual sizes) 1 egg. mix egg and tuna and form into patty. spray pan with pam and cook till light brown on each side. I also add onions which gives it a great taste. Eat by itself or one slice of bread or two slices of bread for a sandwich. Very filling and tuna is so points that I eat the whole can. I just make it into one big patty.

Hope some of these ideas are useful. I'll try to think of more and get back to you.
