Watch rides on youtube to get an idea of which ones your little ones will like or be scared of. I would also book dining with their favorite characters to prevent standing in long lines to meet them. Mine are 6 and 4 and they love looking at pictures and videos on line. It gets the excitement going. And they might look like this

You might want to visit the RESTAURANT board.
Crystal Palace at MK has a good character breakfast w Pooh and Friends.
Chef Mickey's at the CR has an AWESOME breakfast character meal with Mickey and Friends.
1900 Park Fair has a Cinderella Prince Charming dinner at the GF.
