For Animal Kingdom, Tusker House makes a mimosa using their signature jungle juice (or whatever they're calling it today) rather then orange juice. Just outside Tusker House, at the Dawa Bar, they have four custom Bloody Mary's they serve until I think 11 (so basically, only for two hours). I love those Blood Mary's: last time I was there, I had the African one (Snow Leopard Vodka, Loaded Bloody Mary Mix, and Spicy African Berbere Sauce, garnished with Berbere-rubbed Beef Jerky, Celery Stalk, Carrot, and Parsley) and it was sooo good. I'd like to try the Asian one. There are various cocktails scattered around at different booths in the park, but most of them are fairly light on the booze and not all that interesting.
Hollywood Studios, there's not many choices. As far as I remember, Sci Fi has no real drinks of interest. 50's Prime Time has a bar, though, and Brown Derby has a lounge. If you're in the mood for a drink, I'd stop at the second. They have a variety of classic cocktails, sometimes with slight twists, that are great. Then you have the little flights- three margaritas or three martinis in adorable little cups. Tasty, too, but adorable.
MK, basically, you don't have any real choice.

On the Monorail line, though, there's Trader Sam's (tough to get in to, but full of fantastic rum drinks and general quirky fun), Minzier's Lounge (GF's bar, has it's own bar menu of various nice drinks- could be worth a stop after or before dinner if the kids wouldn't mind), the Tambu Lounge's famous Lapu Lapu (served in the pineapple), and any bar at a signature resort.
Epcot? All sorts of choices. Try a margarita at La Cava, or do some tequila shots (or even a tequila flight). Try some sake in the back of the department store in Japan, or a sake flight in the small bar booth outside of it. Try a scotch flight over at the Rose and Crown. There's a wine passport that takes you to France, Italy and Germany and has you try two wines from each country- or you can just try individual wines. For more options, head back to Tutto Gusto in the back of the Italy pavilion for even more wine (some of it quite fancy), Italian beer, and some Italian cocktails (and some just odd ones- how about tomato vodka and dry vermouth?); they also have a really nice six wine flight that's good for sharing and is a decent taste of the regions of Italy. Lots of people like the Grey Goose slushies served in France; I'm not too fond of slushy drinks, but they're there. Beer? Check if the Unibroue are avaliable at the beer cart in Canada (or, really, anything but Moosehead and Labett); I'm not a beer fan, but apparently those are really good beers. Tipsy Ducks in Love at the tea cart in China is one of the strongest drinks in Epcot, and also my favorite. As for shots, Germany has Jagermeister and Apfel, while Norway has the lovely Aquevit. Really, as long as you avoid 'This country's equivalent of Budwiser' beers and 'The wine you can buy at liquor store for less then what glass at Epcot charges' (looking at you, Sutter Home), you can't go too wrong at Epcot.
