Need meatloaf recipe

I would like a tangy type of tomatoe one. any ideas?This would be my first.
 
Recipezaar has some great recipes. I'd look for tomato paste as an ingredient if you're looking for a tangy tomato taste.

Here is my grandmother's recipe. Very good. The topping makes into a glaze.

1 lb. lean ground beef
1 small can tomato sauce
1 egg
1 sleeve crushed saltines. (I roll them out, with a rolling pin)
1 small chopped onion
salt and pepper to taste

Make into loaf, and put in bake pan. Top with a mixture of 1/2 ketchup, 1/2 barbeque sauce, a few splashes of worcestershire sauce, and a little brown sugar. Add water to bottom of pan.

Bake at 375 degrees, for about 1 hour.
 
I make just a basic meatloaf -onions, eggs, breadcrumbs, salt, pepper, parsley, worstershire sauce, ketchup and a dash of cayenne- I don't measure. After it's formed and in the pan I mix up ketchup, some brown sugar and powdered ginger and "glaze" the meatloaf with that - it's very nice and has a nice tang to it - even better the next day cold on a sandwich!
 

I don't do measurements, but I make a meatloaf with ground turkey, an egg, bread crumbs, finely chopped onions, salsa, and shredded cheddar cheese. Yum! Using salsa instead of ketchup gives it a kick.

Mom's Meatloaf

50's Prime Time Cafe

INGREDIENTS:

2 lb ground beef
1 lb ground pork
4 eggs
1 cup seasoned bread crumbs
½ cup diced onions
1/4 cup diced green peppers
1/4 cup diced red peppers
2 Tbsp worcestershire sauce
Cracked black pepper to taste
Kosher salt to taste
½ cup Meatloaf Glaze (recipe below)

METHOD:

Dice peppers and onions and set aside for later use. Combine meats and seasonings. Add vegetables. Place meat mixture in oiled loaf pan. Bake at 350º F oven for 1 hour (internal temp 155º).

Brush meatloaf with meatloaf glaze. Bake another 10 minutes. Let meatloaf set 10 minutes, cut loaf and serve.

MEATLOAF GLAZE
INGREDIENTS:

½ cup ketchup
1 Tbsp brown sugar
1 Tsp Dijon mustard
½ Tsp worcestershire sauce

METHOD:

Combine all ingredients until mixture is smooth.

This is mine almost exactly. Except instead of BBQ sauce - I use A-1 steaksauce and a pinch of that Montreal steak seasoning.
 
I do 1 1/2 lbs ground beef, add 1 chopped onion, salt, pepper, 2 shakes of worschestershire sauce and add what was 1/2 rice before I cooked it- cooked looks like more. I mold it in a saran wrap lined loaf pan and turn it out into a bigger baking dish, so it doesn't have to swim in it's own grease. Then I dump a 4 oz can of tomato sauce over the whole thing and bake for about an hour. at 350.
 
Everyone LOVES my meatloaf. I don't measure anything, just throw it in. Use a couple of pounds of hamburger, add a couple of eggs and a bunch of Bell's Stuffing Mix for the bread crumbs. Chop green peppers, onions, throw in some garlic powder, add some ketchup, Knead it all together and put it in a pan. Use your hands to split the middle to make a tunnel. Throw in whatever hard cheese, chedder, American, etc you have in the fridge. Bake at 350 for about 45 minutes but about 20 minutes before it is done, spread some Campbell's tomato soup on top.

I don't know whose picture that is on the linked site, but mine looks so much better than that! Also, a tip from Paula, if all the grease around the meatloaf when it cooks makes you :scared: , line the bottom of your baking pan with fresh bread slices. The bread soaks up the grease so it doesn't ooze back into the loaf.
 
I use 1 1/2 lbs ground beef, 1 cup of milk, 1 tbsp wortershire sauce, 1/2 tsp salt, 1/4 tsp pepper, 2 gloves of garlic(finely minced), 1 egg, 3 slices of torn bread, 1 small onion;chopped (I saute the onion in butter for a few minutes and drain), and a couple of squirts of ketchup. I then top it with ketchup and bake @ 350F for 1 hour.

I mold mine into a loaf in a casserole dish and put on a rack to drain off the fat.
 
I love this recipe and got it from my mom.

Meatloaf:

1/3 onion, finely chopped
1 1/2 teaspoons garlic, crushed
1 pound ground Beef Top Round
3/4 cup Ritz cracker crumbs
1/3 cup Parmesan Cheese
1 egg
1 tablespoon Worcestershire Sauce
1 dash Tabasco
1 dash parsley
1 dash oregano
1 dash black pepper
1 dash salt

Sauce:

1 cup ketchup
2 tablespoons brown sugar
2 tablespoons honey
1 tablespoon dijon mustard
1 1/2 teaspoons Worcestershire Sauce
1 dash Tabasco

Saute onion and garlic. Combine onion/garlic mixture with hamburg in bowl and add remaining ingredients. Place into loaf pan (sprayed with Pam).

Combine all sauce ingredients and cover the loaf with the sauce.

Bake @ 350 degrees for 1.5 hours
 
I use a meatloaf mix of ground beef,veal and pork (they sell it this way at the grocery store). I add in two eggs, bread crumbs, basil, oregano, a little garlic salt, ground pepper, worcesteshire sauce, and milk. Then I mix them all together and form the shape of the meatloaf. I put the ketchup on top and then bake in the oven. It's really good, but I don't have exact measurements I just do it my sight since I've been making it a long time.
 
I don't have a recipe at all -- I just throw the meat, eggs, garlic salt, bread crumbs, italian bread crumbs in a bowl -- mix form into loaf. Here is the topping

Ketchup & karo syrup -- just eyeball it. This is what my mom made growing up and I do it now. It's delicious.
 
i do the italian cheese rolled meatloaf, tastes like a yummy meatball. :banana: take the ground beef, add some marinara sauce, italian bread crumbs, parmesan cheese, italian seasoning, black pepper, garlic salt, eggs, and an onion. mix it up and flatten out. sprinkle shredded mozzarella down the middle and fold over and mold into loaf. put more marinara on the top to cover the loaf. cook, then add more mozzarella to the top. cook until melted. sooooo good! :thumbsup2 made it yesterday, the melted cheese inside the middle is to DIE for. :love: i can live on it. lol!!:lmao:
 
Our FAVORITE meatloaf recipe now is the Boston Market Meatloaf recipe from Top Secret Recipes. No filler....and its yummy & moist!!!! We will never go back to the old fashion meatloaf recipes with bread crumbs, eggs or milk. I like to make 2 & freeze the slices. BTW, I use what ever BBQ sauce we have.

Boston Market Meatloaf

1 cup tomato sauce
1 1/2 tablespoons Kraft original barbecue sauce
1 tablespoon granulated sugar
1 1/2 pounds ground sirloin, 10% fat
6 tablespoons all purpose flour
3/4 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
dash garlic powder

Preheat oven to 400 degrees. Combine the tomato sauce, barbecue sauce and sugar in a small saucepan over medium heat. Heat the mixture until it begins to bubble, stirring often, then remove it from the heat. In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat.

Use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined. Combine the remaining ingredients with the ground sirloin; flour, salt, onion powder and ground pepper. Use the wooden spoon or your hands to work the spices and flour into the meat.

Load the meat into a loaf pan. Wrap foil over the pan and place it into the oven for 30 minutes. After 30 minutes, take the meatloaf from the oven, remove the foil and drain the fat.

Using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan. This will help to cook the center of the meatloaf. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf, in a stream down the center. Don't spread the sauce. Place the meatloaf back into the oven, uncovered, for 25 to 30 minutes or until it is done. Remove and allow it to cool for a few minutes before serving.

Serves 4.
