Need ideas for cooking light meals while on vacation...

WE ARE GOING TO DISNEY SOON!!!!!....

I need ideas for meals that I can cook fast, while we are on vacation!!!

We are staying at Silver Lake Resort for the first 8 days of our Orlando vacations then we are staying at CBR for another 8 days . While we are at Silver Lake I have the use of a full kitchen, this will help my food budget, also my two boys are very picky eaters, they do not like Mc donalds or pizzas. (home cook food only:( ) But right now I am suffering from "brain freeze" while trying to put together ideas for the menu.

For the mothers of "Picky Eaters Club" kids: What ideas or suggestion can you give me .....

Also we are a family of four (2adts,2childs) how many q/c vouchers do we need for 8 days? (I already have 20)

Split meals on the Q and C--plenty of food for two especially at Beaches and Cream and Pepper Market. I brought a crock pot to our rental at Cape Cod and did familiar food for a few meals. We also had a Caribbean and Mexican night (guess not for picky eaters LOL) inspired by sweet maxine.

Can you bring a jar of peanut butter? Or is that not on the preferred food list?
 
My favorite food to bring to the beach in our cooler is chicken wraps.
I buy the pre cooked, sliced chicken which comes in grilled or italian (Louis Rich I think). I cut up a tomato and lettuce and cheese and toss it all together in one big tupperware bowl with a lid and pop it in the cooler. When it's time to eat, I scoop it out onto a wrap, squirt mayo or ranch dressing, wrap and eat. It is healthy, quick and travels well.

Another favorite of the family is the chicken pot pie recipe on the back of the Bisquick box. It's just chicken, cream of chicken soup and whatever veggies you like. The crust on top is like a biscuit made from Bisquick, milk and egg.

Another one is chicken (again!!). On the back of the cream of whatever soups from Campbells is a receipe for creamy rice and chicken baked all in one pan. Very yummy and quick clean up especially if you toss a veggie in the pan too.

My mom always makes a crock pot of chili when we are on vacation. Easy and convenient.

Well, I have a few suggestions for you, if you are driving down, why not prepare a few meals and then freeze them, that way when you get ready to eat them all you have to do is reheat them. You can make a pot roast in a crock very easily, Roast, onion, cream of mushroom soup, serve over rice or maybe instant mashed potatoes, throw in some salad or green beans, also I like chili, it is easy, or make spaghetti sauce and then all you have to do is prepare the noodles when you return. I hope that you have a great trip.

We do "breakfast" for dinner som times since that's usually easy stuff. And what about a frozen lasanga (sp?), that's always really easy.
 
Frozen lasagne is really easy, but not fast. Those babies take forever to cook! Remember to plan to have it in the oven for at least 1.5 hours, and that's just the family size.

Here's a quickie that my kids love. Buy a pack of refrigerated tortellini - my kids like the cheese stuffed ones, and a container of 4-cheese alfredo sauce. Then, a bag of fozen peas, a bag of frozen broccoli florets or whatever your kids will eat, and a pack of ham lunch meat. Bring a big pot of water to boiling and cook the tortellini. You can warm up the broccoli in the microwave before you heat the sauce. When past is almost done, add warmed broccoli and peas. Drain all of that and add the heated sauce and the ham. My kids devour this. Garlic bread is a fun addition if you want to cover all the starches!
 
If I were going to try to do some meals in the suite... Id buy fresh cold cuts (each of our favorite meats and cheeses), crusty rolls, cole slaw or potato and maybe some ice cream or a pepperidge farm cake.

Id be at the closest market every day or every other buying more bread / meat as we like it super fresh;)

That would be easy for us, and we would have bagels, fruit and yougurt for breakfast. (splurge for a decent lunch each day)

Ive never done it, but if I did, that would be my game plan. Also, maybe pick up some cookies or fresh chocolates in the parks... So good....
 
How about wrapping lunch meat or hot dogs in crescent rolls?

Your sons can date my DD, she doesn't like pizza either! :p
