Need help with a planning question

I could use some help. I'm not new to Disney planning, but I feel like every time I turn around, there is a new announcement that throws my plans into a tizzy! DH and I are going on an adults only trip in June, so I don't feel like we have to be super structured, but I do like to have a basic plan of park days and ADRs.

I know ROL should be open, so I am planning a later night at AK, but today I see that there is a new nighttime spectacular opening in HS! We love SW so that is awesome news... however, we only had one full day and one half day planned for HS. On the full day we already have MM F! booked. So, can we do both? Will we be pushing it?

We have Narcoossee booked for an 8pm dinner booked on our half day.... We are on the DP, and since the surf and turf is no longer available on the DP we wonder if it's still worth going.... should we cancel and go elsewhere for dinner and come back to HS for the SW nighttime show??? We've never eaten at a signature, so we thought it would be nice to try one; however, if people say that going back to the park and eating elsewhere is worth it, at the end of the day - it's food!

I'd say the best thing about the parks these days are their Night Time Shows. I wouldn't miss SW Nighttime Spectacular. The Frozen Fireworks was the best part of my trip last Summer. I think I would reschedule dinner for Yachtmans or Brown Derby and watch the fireworks.

I can't wait to hear about River of Lights.

Thanks... that's what we were thinking too.... DH said that he really wants to see it and that at the end of the day food is just food...
