we are going to WDW for only the 2nd time ever. There is me, DH, DD (7) and DD(4). The last time we went, we did:

This is what I have this time (staying at Coronado Springs, no car, no park hoppers):
9/22 arrival day, MNSSHP (I hope)
9/23 relaxing day (assuming we will be out late the night before), or water park, Maya Grill 6:30 pm
9/24 MK, Ohana breakfast 11:00
9/25 EP, Akershus 9:35 am, Tutto Italia 4:30 pm
9/26 AK, Tusker House 10:05 am, 1900 Park Faire 5:45 pm
9/27 BB, Pepper Market for supper maybe
9/28 MK, Crystal Palace 11:45 am, O'hana's 6:30 pm (hoping to watch Wishes from the beach)
9/29 DHS, 50's PTC 11:35 am, ?? for dinner
9/30 Coral Reef 5:30 pm
10/01 lunch at DTD, head home
My questions are:
should I try to rearrange some of my days/ADR's b/c the UG says that on 9/25 Epcot is the worst park to be at, and 9/28 is the worst day to be at MK. Which are of course the days that we are at those parks. Should I even worry about this in September? I've tried a couple of times online and I can't get Akershus any other day. Should I keep trying or just be happy with what I have?
Also, I need to cancel one of my TS - I have too many and I don't want to pay OOP. I'm thinking of 1900 Park Faire, b/c we already will have met several princesses at Akershus, and we did Cinderella's Table last time. Or should I cancel Tusker House? My girls aren't big on eggs/bacon type breakfasts. Or Maya Grill?
I had Teppan Edo for one of the Epcot days, and switched it to Coral Reef. Was that a mistake?
