Need help quick! What should I cook??

Hi guys, I need a little help here. Here is the sitation.....we will be leaving for WDW on Fri morn. my dh's grandparents and aunt are coming down the day before we leave and I will have a house full. I would like to cook for everyone that Thurs night but I am not sure what to cook. Does anyone have any ideas?? I will need to feed about 18 people...It needs to be something not to hard or not to expensive and something that will not be leaving lots of left overs, no one will be home to eat. Thanks guys,

How abt sloppy joes or tacos ? you could have the meat already cooked earlier in the day & warming in a crockpot - then everyone pretty much serves themselves with the fixings with whatever you choose to serve.

You could also keep the dessert simple like root beer floats with the sloppy joes...

To feed that many people-bbqs, spagetthi, stew, or you could make fried chicken-just think that everyone will eat 2 or 3 pieces, corn on the cob, coleslaw, french fries, and drinks.

I think I would probably order in pizza and a greek salad or something, but if you really want to cook I have a stuffed chicken breast recepe using boneless breasts that everyone always loves. You can stuff them in the AM (I use stove top stuffing so it is very easy) and just pour on the sauce (lemon juice and white wine and some spices) and put them in the oven to cook later. If you are interested I will post the recipe, just let me know. This served with a salad makes a nice meal.
 
I say takeout. Do a chinese buffet in your own home. Plus, since you only have one evening with them, it will give you more time to visit with them, instead of cooking/cleaning!

Most restaurants will put an order together for you...possibilities are endless. Chinese, pizza, italian, grinders, etc.
 
Thanks for the thoughts and suggestions guys I think I have decided to forgo the cooking and start my vacation early and just go out to eat. Thanks again.

Lasagna! Add a little salad and wahla. You could prepare it ahead of time and if there are any leftovers just freeze them for when you get home. This is one of my favs to make. Good luck.

Twigs, I would LOVE this recipe please. I belong to a bunco group and am always stressing about what to make when it's at my house. I like something that looks and tastes like it was hard to make, but isn't. ;) thanks!
 
Lasagna from Sam's Frozen food department. Canned Green beans. Garlic bread and brownies for dessert. One stop shopping.
 
Some of the things we've done for large groups are a big pan of lasagna & garlic bread. Costs us about $55 from a local Italian restaurant, and we've had a group of about 20 people eat this. If there are any leftovers - just put them in the freezer until later.

Chinese is also another great idea too!

No one delivers pizza out where we live :mad: which is why we've never tried that one for a group.
 
Disneyaholic, here is the recipe:

Stuffed Chicken Rolls

4 boneless chicken breasts
2 tsp. salt
1/4 tsp pepper
1c. cooked herbed rice ( I use stove top stuffing with rice or chicken flavor)
1/2 c. butter or margarine (melted)
1/4 c. lemon juice
1/2 c. white wine
2 tsp. dried chopped chives
2 tsp. dried parsley flakes

Pound chicken flat, ( I usualy just slice each breast half into 3 thin pieces) sprinkle with salt and pepper. Place about 2 T. stuffing on each piece, roll and secure with toothpicks(I try to use just one large sandwich pick).

Make sauce with remaining ingredients(I usually double these as we like a lot of sauce). Pour over chicken rolls, bake uncovered in 350 degree oven for approx. 1 hour. Baste while cooking.

As I said before the rolls can be made earlier in the day and refrigerated until you bake it. You can also cut the chicken in whatever size you want you can make them very small or big.

I've got one for stuffed Greek chicken- it's fantastic too:

Stuffed Greek Chicken:

4 chicken breasts, thawed and cut or pounded thin

stuffing:
1 pkg frozen chopped spinach, thawed, cooked and drained
(use 2 pkgs if you want a lot of stuffing)
1 egg (can just use white, if you want to cut cholesterol)
1 c. chopped feta cheese
2 T finely chopped kalamata olives
2 T chopped pine nuts (I roast them beforehand)

Combine all stuffing ingredients and mix. Shape mix in the size of large fingers and place on chicken. Roll and secure with toothpicks for string. Place in a small baking dish (so that chicken sides are touching) and bake, covered; approx 45-60 minutes in a 400 degree oven.

Serve with saffron rice or greek roasted potatoes (red potatoes, olive oil, greek seasoning- bake, stirring occasionally, 1 hour)
