Need Help. Have to make a meal for someone with Celiac

A woman in our squadron recently had a baby and I am going to deliver a meal. Their daughter, however, has Celiacs. She can't have wheat, oats, rye, or barley. Does anyone have any good recipes or ideas of what I can make for them?

Any help is appreciated.
 
You can keep it simple by serving meat, veggies and rice. If you have a recipe you really want to make that includes the banned items, you can look for safe substitutes for lots of foods at Whole Foods or Trader Joe's (or other natural food stores). For example, if you want to make lasagna, you can get rice noodles. Just be sure to check the labels on any sauces you use to make sure there's nothing hiding in there. If you do use any alternative foods, be sure to tape the ingredient label on the cover of your dish. That way, the parents will know exactly what's in it and they'll be grateful to you for helping to keep their little girl healthy!
 
Also watch out for malt and dextrin these ingredients are in a lot of foods but they are not "Celiac Friendly." Although maltodextrin is OK. Try this website, lots of good recipes!

We had a potluck at work on a day where one of the temporary employees was working, and she has celiac. Another employee made gluten free taco meat, and then used the hard shells that were gluten free. The toppings were lettuce, tomatoes, and onions, and we brought sides of cheese and sour cream, everything separated so that everyone could add their own. We also had flour tortillas for those who wanted them.
 
I often end up with someone visiting for dinner with celiac. Favorites are:
Turkey, mashed potatoes, vegie
Ham, scalloped potatos, salad
Sloppy Joes without the buns or you can buy gluten free bread/rolls
Tacos or Taco salads
Chicken
Hot dogs and beans
Chilli over hot dogs

Check the ingredients on everything premade. Its amazing how many things are not OK.
