Hi,

I'm looking for a good cake frosting recipe that is light and not overly sweet. The cake will be a dark chocolate (similar to devil's food), but the frosting needs to be vanilla because I'll be tinting at least part of it blue (Finding Nemo party theme ;) ). DH doesn't care for the canned frostings as he thinks they're too sweet. Any ideas? Thanks!

I like this one with chocolate cake.

Cooked Icing

3 Tbl flour
¾ c milk
¾ c margarine
¾ c sugar
¾ tsp vanilla
Cook flour & milk. Let cool. Combine margarine, sugar & vanilla then beat 4 min. Add to cooked mixture.

I don't have a copy handy but it is the butter cream recipe on the side of the Dominos powder sugar box.

Pirates'mate,
I was going to give that same recipe. I love that frosting and everytime I make it I get so many requests for the recipe.
We call that Poor Man's frosting. My mom told me that it was a favorite during the depression because it uses a small amount of sugar which was hard to get during that time. I guess flour was easier to get.
It is a tasty frosting, but not sickeningly sweet. Somewhat like a whiped cream frosting but it holds up better.
I would recommend making two batches though, because it is so good you want to pile it on the cake. Peggie

Thanks for the story Peggie! I never thought about it - this is just the recipe my mother always used for a dense, moist chocolate cake she made. That recipe came from a friend named Clyde & we just called it "Clyde's Chocolate Cake". ;)

But now that you say that I did some checking & found out that my mother got the recipe from my great-great aunt, who had no children of her own & could afford to make cakes occasionally - unlike my grandmother who had 6. I always wondered why Gram didn't make it.

Thank you very much for the replies!

Piratesmate, I may have to try this recipe...sounds like what we're looking for! :D

you could also make a seven minute frosting...ou know the kind made with cooked egg whies and sugar. it's fluffly and heavenly. it looks like waves on the water and you can tint it blue. you've gotta try it, it's soooooo good!

You can always try the "Smooth and Creamy" frosting that is made with Cool Whip. I find it much lighter and not as sweet as most frostings:

1 small package instant vanilla pudding
1 8 oz container of Cool Whip
1/4 c confectioners sugar
1-1/2 cups cold milk

Blend pudding, milk and sugar for 2 minutes. Fild in Cool Whip.

It's that easy, and quite good!
