Need for TODAY~~ a portable, easy side dish for potluck

Budget is an issue. Time is an issue (obviously, since I still haven't found what to make, lol). It can't be a salad (that was assigned to others), nor a potato dish (also assigned to others). Has to feed 10-15.

I live easily an hour away from the party, then the food will be out for a few hours so ideally, nothing that needs kept hot or kept cold. I don't want to be tripping over myself preventing giving people food poisoning,KWIM?

Anyone have anything? I don't want to waste my time making something that ends up being the one thing left on the table, lol.
 
Anybody else bringing breads/biscuits yet? I believe the side of the bisquick box has the recipe for cheddar garlic biscuits. I will add on to that by pouring a tiny bit of melted butter on top of the biscuits.

Maybe some roasted potatoes? Get some little red and white potatoes and roast them with a seasoning packet or two.

My in-laws are a big fan of rice just mixed with a bit of corn.

Do you have a crockpot? If not, an old church potluck trick, wrap the pot in bath towels, place in paper shopping bag and then into a laundry basket to carry. That will insulate it well enough to keep it hot.

Plain old tater tot hotdish always goes over well around here:

1 lb hamburger, browned
1 can cream of chicken soup
1/2 can water
1 small onion chopped
1 tablespoon worcestershire sauce
1 package of tatertots (we actually use the diced hashbrowns)

Brown hamburger and onions. Mix in soup, water, Worcestershire sauce and potatoes, bake in covered dish at 350 for an hour. We often add a can of corn too.

Good one. DH makes the recipe on the Cremette's box and it is very good.

Hmmm...since the main dishes are chicken or rigatoni, bread might be a great idea.

And to think that so far all I had on my short list was a bean-corn dip and tortilla chips, lol. Bread, duh!

is my backup/standby when there's an unexpected pot luck on my schedule and I don't have time to prepare. I keep a few boxes of the "Classic" version in my pantry at all times because it's so easy to make on short notice.

If you can boil water, you can make Suddenly Salad. Make sure you have vegetable oil on hand because you'll need two tablespoons per box. Whip up a few boxes worth, store in the fridge until you're ready to go, and your guests will think you spent a lot of time on this perfectly seasoned pasta salad. :thumbsup2 You can also leave it out on a table for a few hours because there's no meat or dairy in it to spoil. It tastes just as good at room temp as it does cold.

...on occasion, I make nachos. Boy, is it heaping goodness!! On a platter I layer chips, thin-sliced cooked steak (I used a package of Steak-Ums), chicken(the precooked Perdue Short-Cuts chicken breast), a large can of diced green chilies, a drained can of black beans, shredded cheddar cheese, and shredded 3-cheese Mexican blend cheese. I put it in the microwave for about 3 minutes until all the cheese began to bubble. I also served it with corn, home-made guacamole, diced red onion, Frank's hot sauce, sour cream, and salsa (refrigerated).....yum-O!

It's really easy to make and doesn't take long to prepare...
 
Crab Bread

2 packages of cream cheese, softened
1 can crab meat, undrained
5 green onions, tops only, chopped
Large round bread (I use the marble ones)

Mix all the ingredients well (I use a mixer). Cut the center out of the bread to make a bowl. Put the dip in and wrap well in foil. Bake at 375 degrees for about 45 min. Take the bread you cut out and break into bite size pieces. Serve hot.

Buffalo Chicken Dip

1 package of cream cheese, softened
1/2 cup ranch dressing
1/2 cup Franks red hot sauce
1/2 cup mozzarella cheese
2 cans chicken, drained

Mix all ingredients well (again I use my mixer). Place in an oven safe baking dish. Heat at 350 degrees for about 20-30 minutes, or until heated through. Serve with celery sticks and/or crackers. I have a mini-crockpot that I keep it in to keep it warm.

Both of these are always crowd pleasers.
 
Spaghetti Salad

The recipe is on the bottle of "Salad Supreme" in your spice aisle. Basically you have the cold spaghetti, the salad supreme, bottled italian dressing and what ever veggies you want to put in. Usually onions, cucumbers, grape tomatoes and I like to add chopped cilantro. It doesn't need to be ice cold and it travels well. Always a hit.

I've also used Rotini or Bowtie pasta and it turns out great.
