need easy make ahead breakfast ideas - houseguests for 2 weeks

I think that said it all! We're having house guests and other than muffins (already did that) I need make ahead breakfast ideas I can put in the freezer.
 
My all time favorite make ahead breakfast recipe:

Baked French Toast Casserole

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half (I have replaced this with milk and haven't noticed a difference)
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.


Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.
 
Banana Bread, pumpking Bread, zucchini bread

You could make your own "Jimmy Dean Sausage Biscuits" and freeze them, or purchase the ones already made!

Waffles and pancakes freeze well.

Bagels, English Muffins.

Good Luck! Houseguests for two weeks is a LONG time;)
 

I make a breakfast casserole that is like eggs benadict.

I put english muffins in a greased 9X13 pan and cover that with sliced ham or canadian bacon. I put a package of shredded cheese on top of the meat and then cover with english muffins. I mix 10 eggs and 4 cups of milk and 1 t. paprika. I pour that over the muffins and cover with foil and put in the fridge.
Either over night for 1 or 2 nights. I bake it at 350 for 1 hour. I make a double batch of hollendaise sauce from a packet and serve it next to it.

Always get great raves for this one.

The breakfast strata is an excellent dish for anyone who has houseguests because it is prepared the night before and just needs to bake in the morning. Incidentally, it also makes a good supper dish.
8 ounces pork sausage, crumbled
1 pound mushrooms, cleaned, stemmed and thinly sliced
Freshly ground black pepper, to taste
Seasoned toast points or rounds (about 8 ounces to cover baking dish)
1 1/2 cups 2 percent milk
1/2 pound ricotta cheese, park skim, at room temperature
1/2 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
9 large eggs, lightly beaten
1 1/2 pounds Monterey Jack cheese, grated
1/4 pound sharp Cheddar cheese, grated
1 cup broccoli, broken into small florets and steamed lightly
2 cups chopped green onions (green part only)

In a skillet over medium heat, brown the sausage for 4 to 6 minutes. Add mushrooms and sauté until wilted, about 3 to 4 minutes. Season with black pepper, if needed. Remove from heat and cool slightly.

Spray a 15X10-inch baking pan with nonstick cooking spray. Line pan with seasoned toast points or rounds. In a large mixing bowl, thoroughly combine milk and ricotta cheese. Whisk in flour, baking powder and salt. Add eggs, a little at a time, and whisk until fully incorporated. Stir in the sausage/mushroom mixture, grated cheeses, broccoli and green onions. Pour into the prepared pan and cover tightly with plastic wrap; refrigerate overnight or for at least 12 hours.

Preheat oven to 350 degrees. Remove mixture from refrigerator, uncover and bake for about 60 minutes or until golden brown and the center only slightly jiggles and the rest of the mixture is set. Cool for 5 to 10 minutes before serving. Makes 8 servings.

If you're a Costco member, take a look at their freezer--I'm pretty sure I've seen frozen breakfast items like sausage & egg biscuits.

4 boxes of cereal!!! ;) Plus a few of the suggested recipes.
 
DOnuts, Danishes, cinnimon buns. They dont take too much prep work and are easy to make

I agree with the boxes of cereal. If we have houseguests overnight for 1 night, I will make pancakes. If it is more than one night, they get cereal and fruit - and they can help themselves...I am not a short order cook, and they know that when they "make their reservations!"

If you want to mix it up a little, get some bagels and cream cheese.
 
Quiche is always a great easy dish, and you can "dress it up" as much or as little as you desire.

Fruit, yogurt, and some granola make a wonderful morning parfait. (no cooking required)

Bagles with cream cheese or peanut butter, honey, jam, etc.
 
I think the easiest are little quiches in mini muffin tins or a make ahead egg bake type thing. I do one that bisquick has a recipe for that is fabulous, it's a sausage egg casserole and everyone loves it.
 
This is really easy to make up ahead of time. I do all but the eggs. I add them right before baking. We make this every year for Christmas morning:

Breakfast Pizza

2 cans of Pillsbury Crescent Rolls
1 Pound of sausage (I use turkey sausage to cut some of the
fat)
1 Package of hash browns (I get the one with onions and
peppers)
About nine eggs beaten
A Package of mild cheddar cheese

Heat oven to 350 degrees.
In the pan roll out the crescent rolls to line the pan.(Do
not bake the crescent rolls until you put it all together)
Cook the sausage....set aside.
Cook the hash browns set aside.
Crumble and spread out the sausage and the hash brown in
pan.
Pour over the egg mixture and sprinkle the cheese.
Bake in the oven for about 45 minutes....it needs to cook
all the way through...Knife should come out clean when
inserted.
 
I was just going to post the breakfast pizza recipe. Only thing i do different is i dont precook the hashbrowns, i use defrosted shredded ones. i add peppers and onions. and only 6 eggs combined with 3 tablespoons of milk.
