Need budget, healthy, fast, kid friendly meal ideas...

Does anyone have any recipes or can you recommend a website or cookbook for budget, healthy, fast and kid friendly recipes? I really want to try and start cooking healtihier. My DD is 11, so she's not super picky, but she is a little bit.

I get home at 5:00 and try to have supper ready by 6:00 or 6:30, lately I've been making a lot of fast convenient foods, like tacos, chicken nuggets, etc. But, I'd like to try and find some more healthier recipes, any ideas? (I do usually serve a fruit and vegetable with each meal, so I do try!)

My kids love chicken fajitas. I stir fry chicken, peppers & onions, tomatoes and serve with warm tortillas, shredded cheese, salsa and sour cream.

One thing I do to save time is to cut up the chicken the night before and put in a zip lock. The same thing with the vegetables. When I get home from work I just have to pour the contents of the zip lock in the fry pan.

I also use my crock pot alot. Pot roast, chicken and dressing, ribs, beef stew, chicken stew, etc. can all be done in the crock pot.
 
My DD13 is fairly picky, but she loves teryaki chicken and rice bowls. She's not up to eating the veggies yet so she just does the chicken and rice with a salad and some sliced oranges. We stir fry the onions peppers ect. in a seperate pan for DH and I. We just grill chicken breast on the Foreman grill make some white rice and call it dinner. I also LOVE my show time rotissere! I roast at least oneor two chicken a week and them for dinner or make lunches out of them.

I actually haven't tried it yet, but I am going to pick it up at the store. I think it is McCormick found it in the spice aisle, but it was garlic lime fajitias. All the seasonings were premeasured, you just had to add orange juice and lime juice to cook them in. I will let you know what I think when I try it.

I saw those spices in the store today. On the back it had the measurements for each spice, so if you wanted you could make it without buying the pre-measure spices. They had several different spice packets for different dishes.

I've tried one of the packets for chicken fajitas, don't think it was McCormick though, and we didn't like them, I'll just have to keep experimenting!

Check out the website and you'll find tons of recipes. The magazine comes out every two months and has lots of recipes in each issue; you can also buy books from them. I used to subscribe (before we became vegan - now there aren't enough recipes that would be useful to me).

I used to get this magazine, but their recipes didn't always seem too healthy. Have they gotten better? I'll have to check them out again.
 
Skinless drumsticks cooked with bbq sauce or soy-ginger sauce or baked with breadcrumbs

Stir fry with veggies shrimp, chicken or beef served on noodles or rice

Build your own wraps or subs with deli meat or grilled chicken

Quesadillas with left over grilled chicken or veggie

Sloppy joes(we use ground turkey) and sweet potato fries

Homemade burgers(we use ground turkey) and sweet potato fries

Tuna melts or chicken salad melts

Soups and salads

Veggie lasagna

Bean and rice burritos

Chili mac with extra veggies

Breakfast

Homemade pizza
 
Use a crockpot as often as you can. There is nothing better than coming home to a nice hot meal after work, school and sports.
I make my meals the night before. Maybe about 10 min prep. Then put it in the fridge til morning. Before you leave for work, place the food into the crockpot and turn on LOW.

Google crockpot recipes and then search for some you find appetizing.

Remember, any meals you make at home with as little processed food/additives as possible, will be healthy.

I have a delicious fajita marinade from the Weber cookbook: boneless skinless chicken breast. Marinade: 1/2 c canola oil, 1/3 c lime juice, 1/4 c red wine vinegar, 1/4 c chopped onion, 2 cloves minced garlic, 1 tsp sugar, 1 tsp oregano, 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp cumin.
I serve on tortillas with peppers and onions sauteed seperately.
