If you live near a Whole Foods, they have a roasted tomato and I think basil mixture they sell. They have offered as a sample this mixed with goat cheese. It is to die for. Hope this helps.

I tried to look it up on their website, but couldn't find it. They do have other goat cheese recipes it looks like.
 
oh I do this is a party favorite around here.
Tomato and Goat Cheese tarts(Barefoot Contessa recipe) I've done it as is- and also as tiny tart in little phyllo cups- the onion mixture is the key.

1 package (17.3 ounces/2 sheets) puff pastry, defrosted
Good olive oil
4 cups thinly sliced yellow onions (2 large onions)
3 large garlic cloves, cut into thin slivers
Kosher salt and freshly ground black pepper
3 tablespoons dry white wine
2 teaspoons minced fresh thyme leaves
4 tablespoons freshly grated Parmesan, plus 2 ounces shaved with a vegetable peeler
4 ounces garlic-and-herb goat cheese (recommended: Montrachet)
1 large tomato, cut into 4 (1/4-inch-thick) slices
3 tablespoons julienned basil leaves
Directions
Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11-inch square. Using a 6-inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.

Preheat the oven to 425 degrees F.

Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.

Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.

Place 1/4 of the onion mixture on each circle, again staying within the scored edge. Crumble 1 ounce of goat cheese on top of the onions. Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 or 5 shards of Parmesan on each tart.

Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.
 
Here is my absolute favorite:

Ingredients

3 whole (6 split) chicken breasts, bone-in, skin-on
12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt
Freshly ground black pepper
Directions
Preheat the oven to 375 degrees.

Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.
 
I do a roast beetroot, carrot and sweet potato warm salad with goats cheese and pine nuts. Easy and Yum.
Doing it for Christmas eve actually as it is one of my favs.
 
Slice baguette bread thinly and put in single layer on cookie sheet.
Brush olive oil on top of each slice and toast in oven.
Spread goat cheese on each
In bowl, mix up chopped, seeded cherry tomatoes, minced garlic, cilantro, olive oil, red wine vinegar, salt and pepper, jalapeno's to taste, chopped onion if desired, and chill. Put a spoonfull on toast and serve. Delish!!

It's basically bruschetta , but you put goats cheese on the toast first. Very good.

I make a salad out of goat cheese, leaf lettuce, sliced strawberries, and slivered almonds topped with strawberry vinegarette. I find it very tasty.

Thanks--you should try it. Your recipe sounds really good, as well. I am a fan of vinegar. As for the tomatoes and bruchetta---I love it, but it gives me major heartburn.
 
I just got this recipe, it's got goat cheese in it and looks SO good...and a little different from the 'usual'. I can't wait to try it!

And my fave thing to do with goat cheese is cut it into rounds and then dredge each round in finely chopped walnuts. Then warm in the oven (or toaster oven) just before serving dinner. I place them on top of a nice salad with field greens, chopped apple or pear, and a nice vinaigrette. Yum!

I love goat cheese bruschetta!

At my sister's cafe, on the menu was a strawberry walnut wrap that was very popular. It was a tortilla wrap with sliced strawberry, chopped red onion, chopped walnuts, crumbled goat cheese feta and poppy seed dressing. It was so yummy.
 
I like to press chopped pistachios into goat cheese rounds, saute them in butter until lightly browned on both sides, then serve on mixed greens with a slightly sweet vinaigrette.

Easy no cook option: roll logs of goat cheese in different herbs and spices, and put out on a pretty tray for slicing and serving with crackers. For a Christmasy look you could roll one log in paprika and one in chopped chives.
 
Wow, thanks for all the great ideas. I think I'll do the bruscetta and I also have a recipe for a goat cheese, pesto and sun dried tomato quich!

Ok, wanted to clarify. It is tomato and caperberry. I highly recommend if anyone shops Whole Foods. Mix it with the herbed goat cheese.
