Need a REALLY good truffle recipe.

My brother made these truffles a few years ago that were to die for. Now he cant find the recipe.. *grumble grumble grumble*

Anyway, I need a new one now.


Does anyone have one they really like?

Its just not Christmas without truffles ( or those little Chocolate Liqueur bottles, but I already bought those ;) )
 
One of my friends makes them and they are unbelievable. She won't give me the recipe but is bringing some to our open house this weekend. I think they are made with Nestles morsels.

Real quick because i know it's off topic but don't you hate it when people won't share their recipes...What is the big deal? I'm willing to share any recipe i have...Ok, i'm done now...

No worries, I hate that too!
 

2 cups heavy cream
2 pounds semi sweet chocolate, chips or chopped
2 tablespoons unsalted butter
1/2 cup liquor like Amaretto or Grand Marnier (optional)
1/2 cup unsweetened cocoa powder
1/2 cup granulated sugar

Heat cream over medium until it starts to simmer. Stir in choclate. Continue stiring until choclate is melted and mixture is smooth. Add butter and stir until it completely melts. If you are including liqour, add it now.

Line a baking pan with waxed or parchment paper. Pour mixture into pan to cool. then move to refrigerater to have it set.

Transfer it to a mixing bowl and beat on low until it's creamy and smooth.

Form into small balls, handling as little as you can, and use forks to roll them through cocoa powder or sugar. I usually refrigerate them again at this point, but you can leve them at room temp to "cure" a little before sealing them in an airtight container, layers seaparated by waxed or parchment paper.

Soooooooo good.
 
Quick, easy, and yummy!!


Almond Chocolate Truffles

½ lb. semi-sweet chocolate, chopped (I use a 10 oz. bag of semi-sweet chocolate)
¼ lb ground toasted almonds (just put almonds in toaster oven at 350 for a few minutes
until they start to smell real good!)
¼ lb (1 stick) unsalted butter, cut into pieces
¼ cup coffee or rum
Cocoa powder, powdered sugar or chocolate sprinkles for garnish

Melt chocolate in the top of a double boiler over simmering water. Stir in ground almonds. Add butter pieces one at a time, stirring well. When completely mixed, remove from heat and stir in coffee or rum.

Place in refrigerator and chill until firm, about 1 hour.

When chocolate is firm enough to handle, shape into balls and roll in cocoa, powdered sugar or sprinkles. Place in a cookie tin and keep refrigerated until ready to serve.

Makes about 25 truffles.
 
I just made these this weekend. I dipped them all in white chocolate. They are sooo good. The ginger gives just enought zing.

3/4 cup whipping cream
10 whole allspice
10 whole cloves
1 tablespoon mild-flavored (light) molasses
1 1/2 teaspoons grated peeled fresh ginger
1/2 teaspoon ground cinnamon
Pinch of salt

7 ounces plus 12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
7 ounces plus 12 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
1/2 cup chopped crystallized ginger plus additional for garnish




Bring first 7 ingredients just to boil in heavy medium saucepan; remove from heat and let steep 1 hour.

Combine 7 ounces bittersweet chocolate and 7 ounces white chocolate in large metal bowl set over saucepan of simmering water; stir until chocolate is melted and smooth. Remove bowl from over water. Strain cream mixture into chocolate; stir to blend. Stir in 1/2 cup chopped crystallized ginger. Chill filling until firm, at least 3 hours.

Line baking sheet with parchment. Using 1-inch melon baller, scoop filling and roll between palms to form balls. Place on parchment. Chill truffles at least 2 hours.

Line another sheet with parchment. Place 12 ounces bittersweet chocolate in medium metal bowl set over saucepan of simmering water; stir until chocolate is melted and smooth. Remove bowl from over water. Cool until thermometer inserted into chocolate registers 115°F. Quickly submerge 1 truffle in chocolate. Using fork, lift out truffle and tap fork against side of bowl so excess coating drips off. Using knife, slide truffle off fork and onto prepared sheet. Repeat with remaining truffles. Chill until set.

Line another baking sheet with parchment. Place 12 ounces white chocolate in another medium metal bowl set over saucepan of simmering water; stir until melted and smooth. Remove bowl from over water. Cool until thermometer inserted into chocolate registers 100°F. Hold 1 truffle between thumb and index finger; dip halfway into white chocolate. Place on prepared sheet. Repeat with remaining truffles. If desired, press small pieces of crystallized ginger atop truffles. Chill until firm, about 30 minutes. (Can be made 1 week ahead. Cover; keep chilled.)
 
12 oz semi sweet chocolate chips
3/4 c. sweetened condensed milk
1 t. vanilla
1/8 t. salt

On low heat melt chocolate, remove from heat and stir in rest of ingredients
refridgerate for approx 45 min
with buttered hands roll into 1" balls or use a melon scoop
roll into cocoa, powdered sugar or sprinkles
 
I had one that was made with cream cheese it was in the Philidelphia Cream Cheese cook book but I threw out all my cook books with desserts b/c I figured I would never make them again. Now I wish I had them.
 
Most welcome. BTW, my favorite liquor to add to the recipe is Bailey's, though I do cut it bck to at least 1/3, if not 1/4 cup. I like just a hint of liquor flavor in my candy and not too much candy flavor in my liquor. :cool1:
 
Go to Pillsbury.com and search their recipes for "Holiday Truffles". I made this recipe a couple of years ago and they were wonderful. I'm making them again this year to give as gifts. :flower:
