I am thinking about throwing together a last minute trip for next month. It would be me, DH, DD (14) and DS (18). Having 3 beds and two bathrooms would be ideal. What hotels are near Disney with this type of suite set-up?
I am also looking at VRBO options but since it will be a quick 3 night stay a hotel may be cheaper and be just fine.

Desert Inn and Suites has a two room option with a bathroom in each.
A C-1 room has a bath and a half. While the C-2 has two full bath.
If you will need a pool, look for something else. The indoor pool isn't for my group.
 
I think the Stanford Inn and Suites has a 2 bdrm, 2 bath option.
 
The residence inn convention center has suites with 2 bedrooms (multiple beds)/2 baths. Residence Inn Maingate also has a suite that has a loft with its own bath, not sure what configuration of beds you can get.
 

I’ve stayed in 1 and 2 br rooms at Peacock Suites, but not sure if they have 3 bedroom. I’m sure you could also find condo rentals from airbnb, vrbo etc.
 
There are two hotels with similar-sounding names that both have several suite options. One is the Anaheim Desert Inn and Suites (mentioned above). It's across the street from the Harbor Blvd entrance to Disneyland, in very easy walking distance. It has an indoor pool that isn't the greatest. The hotel doesn't look like much from the outside, but the rooms are nice and fairly large.

The other is the Desert Palm Inn and Suites, located at the corner of Harbor and Katella. It's within walking distance, but down the street a ways. It's usually a bit on the pricier side, but the rooms are nice.

You can also price two connecting rooms at various hotels on Harbor. That will give you all the beds you need plus the two separate bathrooms. Sometimes two connecting rooms can have a lower total cost than one suite.

Ugh. We're a family of 7, and now I've been checking out all these hotels with the larger suites, and now have several reservations in February that we may or may not use... This board feeds my Disneyland addiciton more than anything! (Which is fine other than it's so darn expensive!)
 
HoJo has options with 2 bathrooms.
The kids' suite at HoJo's has two rooms. The first room has a bathroom, two twin bunk beds, and a twin sleeper sofa. There's a connecting door - the next room has a bathroom and a king bed. You can also request a rollaway cot ($10/night?)
 
Our party of 7 recently stayed at the newer Staybridge Suites that is on Ball, just west of Harbor and Disneyland Drive. We had a two bedroom suite which was a nice, generous amount of room for us: a kitchen and living area with pull out sofa, separate bedroom with two queens and a bath, and a second separate bedroom with a king and it’s own bath. Lots of privacy. Even though it’s close in proximity, we never figured out the best way to walk or get to the Mickey & Friends tram, but I bet it’s not bad.

The RI Maingate - it's called the penthouse but really it's a bedroom, living area and loft. The bedrooom has 2 queen beds and a bathroom. the loft has a king(I think) and a bathroom. If you book early you can get a great deals on it. I'm going the last week of October and locked in the rate of $269 per night. My friends and I stayed last year and it's the way to be in the same hotel room but have space from each other.
