Narrowing down the ADR choices - feedback welcome!

Hi! Going to WDW (1st time since I'm a kid) end of April with DH, DS 7, DD 4 and my parents. Staying Sun-Fri at BLT, 2BR villa, so breakfast and lunch are not priorities as we can eat in room, or grab QS in park somewhere. I would like to do one character breakfast, 2 tops if you feel there are two must dos. DD loves princesses, but DS is more of a super hero junky, especially Star Wars.

Here is our rough itinerary (5 day base park pass):

Sunday (arrive) - Epcot. No character dining. Need restaurant rec for dinner.

Monday - MK.
B: Chef Mickeys since we are staying at BLT?
L: TBD. BOG or Columbia House?
D: CRT?

Tuesday - DHS
B: TBD
L: TBD
D: Mama Melrose Fantasmic Dining? Skip this and do SciFi?

Wednesday - AK
B: TBD
L: TBD
D: Tusker House? Boma? or head over to DD and do Raglan Road?

Thursday - MK
B: TBD
L: TBD
D: Please Recommend (non character dining). Resort dinner somewhere on monorail? Hearing bad things about Ohana lately....
GF Dinner?
DD Dinner?

Any suggestions are welcome. Feel like the restaurants that get a lot of hype on these boards, have also been disappointments lately.

1.) Chef Mickey's gets crucified for it's service and quality, however breakfast is tolerable and the location is optimal, especially to get an early start and go right into MK.
2.) Be our Guest for the experience. Lunch is nothing to rave about, but priced decent and the sandwiches are pretty good.
3.) CRT is pricey and the food never earns the price tag, which is why we do it for breakfast for the lower price to just get the 'castle experience'.
4.) Mama Melrose food and service is better than Sci-Fi, but the food isn't anything great and I would honestly go to Sci-Fi for the atmosphere, lower priced food and just head to Fantasmic early.
5.) Resort dining...signature or no?

Columbia Harbor House definitely. LTT is good for lunch only so you might consider swapping the FS dinner and do a QS then.
I would not suggest CRT or Ohana, quality of food is lacking and overpriced.
Boat/Monorail from MK - Trails End, Citricos, WCC, Cal Grill
Tusker House and Raglan are good. Love the irish dancing in the evening. I like Mama Melroses as well.
Other Resort options - breakfast Capts Grille. Anytime Olivia's

Character meals - not really any choices for super heros, Disney is lacking boy type character events. I would recommend 1900 Park Fare or Akershus

Oh, Disney just labels their 'upscale' locations on the dining plan as 'signature locations'. They're 2 dining credits on the dining plan, higher priced menu offerings, etc.
The signature that would be my choice off the monorail would be Narcoossee's at Grand Floridian.
 
Star wars weekends should start mid may if you can push your plans back for your son. otherwise there will be no star wars character meals during your stay.

I don't know what you plan for routine, but I just got back from my first trip (sept) with a 4 year old and naps were key for us. We did rope drop every day but one and were into the parks til 9 or so after having a midday 4-5 hour break for the pool and naps. We adults napped too! My DD usually doesn't nap, but on our trip if we didn't get her a nap the evening was not fun.

FYI Fantastic might be too much for a 4 year old. We skipped it. Watch the youtube and see for yourself. We had our only meltdown on our first attraction - spaceship earth believe it or not. After that we got a small flashlight on a lanyard for DD to use when it was dark and it helped a lot!

The cali grill in the contemporary is nice for a night for a couple if you left the kids with the grandparents. Plan your ADR around the wishes fireworks to see them during or right after your meal.

Coral reef in epcot, good food and a great view.
We liked CRT for breakfast, the lunch and dinner menu didn't appeal to us.
Hollywood an vine breakfast was great as our DD loves Doc and Sofia.
Mama Melrose was the worse food of any restaurant on our trip, edible but we wont be back. I should have went to Hollywood brown derby... next time.
Tusker house surprisingly had great food.
BOG - beast is only at dinner. Food is good and overpriced for both breakfast and dinner.
Ohana dinner was great, next time I wont eat the bread or salad to save room for the great noodles and meats. Breakfast was standard fare with characters.
