I would suggest Artist Point. It is a must-do for us each trip and I am a slave to the salmon and berry cobbler. To improve the atmosphere, be sure to request a table by the window - even after dark it makes a difference.
Both are very good. If you want seafood, then do Narcoossee's. If you want beef or bison, then do Artist Point. At Narcoossee's you can view Wishes. Artist Point is quieter and more adult in atmosphere. Only you can decide what you are looking for.
It depends what you're looking to eat and what type of atmosphere you want. We had a very nice meal at AP in the not so distant past.

Artist Point is my favorite signature at WDW. I am a huge seafood fan, but I am not overly impressed with Narcoosees. I prefer Flying Fish for seafood.
