Mythos New Head Chef!!!

My guess is you're talking about the manager who was there in between Theresa and Eric. I actually thought she did a good job and would have been very good at Mythos. The head honchos, in their infinite wisdom, replaced her with someone from Citywalk. He lasted only a few months and was then gone. The carousel of management in the last three years has been staggering.

Actually she was just filling in.

I met Shannon today. You did not bother to mention that she is beautiful as well as talented. We sat and talked about the history of Mythos and working with Chef Mark.
Chef Mark is very excited to have Shannon as the Mythos manager and after our conversation today i look forward to Mythos maintaining the distinction of #1 Theme park resturant in the world. She will also be scanning these boards in the future since i told her she has a fan on this thread. :smooth:

Mythos also has a brand new manager, the beautiful and very capable Shannon-someone I had the pleasure of working with at Confisco for almost two years.

My bad, you did mention beautiful :thumbsup2

I really look forward to the future of Mythos with both Shannon and Mark there. It seems from what Shannon said that as long as the head Chef over all of Universal is kept in the loop, she and Chef Mark have a pretty free hand to come up with some surprises :smooth:

MIB999999,
I've noticed you mostly eat lunch at Mythos. Do you ever eat dinner there? If so, how do you think the two meals compare? We ate dinner at Mythos week before last & were very disappointed compared to the meals we've eaten there in the past. We've never eaten there for lunch, but will try that next time. I doubt we'll be going back for dinner.

Yeah, I definitely mentioned beautiful because Shannon is certainly that. She's also business saavy, and has an understanding of the biz that she will succeed in any environment she works in. Hopefully, she'll be the face of Mythos for a long time to come.

The other manager we were discussing was, technically, only a fill-in (as you stated). But, if the higher ups would've had enough confidence in her, the position would've been hers fulltime. They're bad, because she was excellent and it was just another example of how they misjudge their employees. The silver linig to any of this is that Shannon gets the "keys" and an opportunity to showcase her talents.

the menu for dining when they are open later, as they are at this time of year is the same as during the lunch period. In short there is menu "a" or menu "a" to choose from. :smooth:

It is my opinion that Mythos has that number 1 rating due in large part to Chef Mark and Theresa. So i certainly look forward to a Shannon/Mark team keeping Mythos at the top :smooth:

Ok, do they still have the fried sushi roll? That would be the only reason. I would go here. I looked up the menu, on allearsnet, and didnt see it. Any of you know, if it is still there or not. Thanks!!

It was there a few weeks ago.

But someone fill me in on Chef Mark's injury. I missed that.

I think I'd agree with that statement completely.

Mythos is my favorite too. One of the reasons I look forward to going back to U all the time. Can't wait to check out the new staff. I did the scallops last time myself, very awesome. Only thing I would suggest is MORE options on the menu, (more seafood items preferably) Seafood is fairly easy to do and Mythos to me is the type of restaurant that just should have several seafood choices. Just seemed like the menu was a little short would be my only complaint. Maybe a butter/lemon/garlic sauce to go with it? Can't wait to go back.

That's precisely why I said we'll try it again for lunch, but not dinner. IMHO, the menu is better suited for lunch.

BTW, do you have any idea why they changed the salmon? That was a fabulous dish that is now just okay. :guilty: I'm hoping the new management will get rid of some of the more recent changes & bring Mythos back to it's original standards.

I also think that to be the #1 themepark restaurant they need to really expand the menu. IMO, the mini-desserts are a good idea for lunch, but should be abandoned when they're serving dinner. No offense to Mythos lovers, but IMHO there's better themepark restaurants 15 minutes away. Since we visit UO much more frequently than WDW now, I'd selfishly like to see them earn that rating & serve me a meal better than I can get at Epcot. :teeth: I'll admit that I base my comparisons on dinner alone, because we usually have lunch at our resort.

Seafood can be easy to prepare (or not, as is often the case) but it's also way more expensive than chicken, pork, or beef (in most cases) and also has a quicker shelf life than the other items mentioned, thus a higher rate of spoilage.

Having said that, I agree that Mythos needs more seafood entrees.

The process of changing anything on a UO menu is like pulling teeth. You have to have multiple people signing off on it, and ultimately, egos clash, which is why changes are fairly rare. Ultimately, the decisions to change the menus lay in the hands of the park VP and Head Chef (not Mark, but the IOA Head Chef), so good luck on that subject.

You would be amazed what a customer comment slanted to the poor judgement of the head chef (not Chef Mark) can do!!!!! :smooth:
