One of my goals the past year was to teach myself how to cook since I never really learned how growing up. I've always been able to make dinner, but it was always the same old boring things. Anywho, I scour for recipes EVERYWHERE for fairly easy recipes, and today was my first time looking at the DIS board for recipes, so since I stole a few recipes, I thought I'd share a few of my favorite 
Cheesy Chicken Cups (found this on Weight Watchers forum)
~8 Pillsbury Grands! Reduced Fat Buttermilk Biscuits
~1 cooked chicken breast, cut into small pieces
~1 can reduced fat cream of chicken soup
~2/3 cup shredded fat-free cheddar cheese
~1 t dried parsley
~1 t black pepper
1. Press the biscuits in a muffin pan and up the sides to form cups.
2. In a bowl, combine the chicken, soup, cheese, parsley and pepper. Mix well and spoon evenly into cups.
3. Place muffin pan on a cookie sheet (soup mix may bubble over) and bake at 400 for 12-15 minutes.
Sticky Honey-Soy Chicken Wings (Foodnetwork recipe I think)
~2 pounds chicken wings
~1 cup soy sauce
~1 T grated fresh ginger
~2 T chopped fresh cilantro leaves
~2 cloves garlic, minced
~1/2 lemon, juiced
~kosher salt and black pepper to taste
~2 T extra-virgin olive oil
~2 T butter
~1/2 cup honey
~sesame seeds, for garnish
1. Rinse chicken wings and pat dry. Place wings in a shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice. Toss well to coat; marinate, refrigerated, for two hours.
2. Remove wings from marinade and pat dry; season with salt and pepper. In a large saute pan over med-high heat, melt the butter in the olive oil. When the butter stops foaming, add the honey and chicken wings and fry until browned on each side, about 5 minutes. Continue cooking the wings, turning them over often to coat as the glaze reduces. Cook the wings until they are sticky and cooked through. Garnish with sesame seeds.
Easy Cheesy Chili Chicken (Foodnetwork recipe, modified for picky DH)
~2 T olive oil
~2 T chopped fresh cilantro leaves
~1 T chili powder
~1 T ground cumin
~2 t kosher salt
~1 clove garlic, chopped
~1/2 t black pepper
~1/8 t cayenne
~4 boneless, skinless chicken breasts
~4 oz. Colby Jack Cheese
1. Preheat oven to 400.
2. Whisk together oil and rest of ingredients, except chicken and cheese. Once combined, add chicken, turn to coat.
3. Bake about 20 minutes. Remove from oven and immediately top with cheese - serve as the cheese melts.
