Must see/do places in Cozumel

We are planning on going with a private guide through Cozumel and apparently they will custom design the day for you. If you have anywhere specific you would like to go they will try to take you there. So I am wondering what are some of the place we just have to see? Espcially places that are off the beaten path (but safe :thumbsup2) where we wont be sharing space with a bunch of other tourists :rolleyes1 Thank you everyone!!
 
We hired a private driver for the day in April 2014.

We did:
1. Chocolates Kaokao Factory tour - this was fun for everyone, people were super nice and the kids/adults had fun making some chocolate then tasting the ones that the factory makes...book online, something like $10 per person -takes an hour. Don't think this is a big thing - it is a very small place, you have to try to find it.

2. Visited the San Gervasio ruins to get a taste of Mayan ruins

3. Did some beach time at Mr. Sanchos beach club

4. Visited a blow hole type place on the east side of the island, pretty neat.

We enjoyed having our own van where we could leave some belongings and he had a cooler for us. We stopped by some big Walmart type store right by the pier and stocked up on waters and soda.

I would recommend having lunch at Andale Beach Bar and Restaurant in Playa San Marten. Best guacamole I have ever had in my life. Great location. My boys loved swinging while watching the waves crash at the beach across the street. DH enjoyed relaxing in the hammock with a cocktail.

When you are done eating you should check out the beach across the street if your family likes crazy waves. Not a lot of tourists.
 
Bottom and deep sea fishing! Hire a private charter boat and you can decide on how long you want to fish.
