I'm assuimg about a six day trip.
I would narrow it down by picking a park for each day. Somewhere in your trip, I'd dine at least once at a resort other than your own, I'd dine once at your own resort if it has a TS, and probably more than once for breakfast at your QS. Generally, IMO, we like to get out quickly in the am, so we like to do our TS dining late in the day.
I also think it's good to only do one TS per day, so that your day isn't locked down into getting to restaurants all day.
I do suggest one character meal, not more than two tops, but at least one is fun. Mostly you can pick any one that appeals to you.
There are also some places that aren't character meals, but have a real element of non-character fun: WCC at WL, 50's Prime Time, Sci-Fi, Bongos Cuban(might not be on
DDP), HoB (sould food, music, might not be on DDP), Marrakesh (live music and a belly dancer), San Angel Inn, Teppanyaki (live chef), and RC (I understand the one at AK is better). Try one from the above list. Not all have the best food, but each has a unique atmosphere!
If you have ddp, and won't get a full day on you arrival and departure days, then consider one signature dining exp.
Mostly though, pick out places tthat appeal to you. the theming is really cool at manyplaces, and it's hard to really go WRONG at WDW. Pick a character meals based on characters you like: Mickey and friends, TIgger, Princesses.
You can see some menus if you are stuck, but that is also too much work, IMO, to do for all places.
