Is the refillable mug included with the dining plans only valid for the length of the plan, or the length of the stay?

It's "length of stay" which is automatically 14 nights.

What Disney says and what really happens are frequently two different things.

Guests who actively purchase the mugs pay different rates depending on the number of nights of the stay. The picture here http://www.themouseforless.com/tripplanning/resorts/RefillableMugs.shtml shows the pricing.

It's possible with a one-night stay your mugs would only work until midnight of the day you check out of the dining plan resort.
