Pumpkin Casserole - if you don't have self rising flour use baking powder/salt and regular flour. I make a double recipe and it is always gone in no time at all..INGREDIENTS:

  • 2 cups pumpkin puree
  • 1 cup evaporated milk
  • 1 cup white sugar
  • 1/2 cup self-rising flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter
  • 2 pinches ground cinnamon
DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine the pumpkin, evaporated milk, sugar, flour, eggs, vanilla, melted butter and ground cinnamon to taste. Spoon into a casserole dish.
  3. Bake at 350 degrees F (175 degrees C) for 1 hour.
Instead of self rising flour, I use 1 1/2 tsp of baking powder, 1/8 tsp salt and 1 cup plus 2 T of regular flour..

Mornin' oh virtual friends..... We had a lovely weekend, filled with leaves, a fun date night, and pizza with friends. Harry Potter rocked!!!!! We checked out a new cool, hip restaurant in town and felt like we were dining in Boston. It was very hip and th food was great!.

Did I mention how much I liked Harry Potter.......

And guess who was a bad mom and took her son out of school early last Friday to see the new Harry Potter film? :blush: Yep, it was ME!!!!:teeth: And I'm sooooo glad I did.....couldn't agree more with Castlegazer....that movie totally rocked! :cool1:
And OMG, the actor who played Cedric Diggory :lovestruc ....drool city! ;)

Sounds totally yummy! :earseek: Question: Is pumpkin puree the same as canned pumpkin??? :confused3 Sorry for the dumb question, but you're dealing with the "cooking impaired" here :p

yep it is simple open the can of pumpkin, I use the big one that is 29 oz, use 15 oz of evap milk ( use the rest of the second can in the potatoes), 15 oz of sugar, i don't put the butter in at all. just mix..

The picture was taken on our way to WDW .. and the top is from last year as a present from DH and the boys

Just wanted to wish you all a great Thanksgiving. I am thankful that I have "met" some of the sweetest people in the world right here!!

I have a crazy few days planned. Today is Lauren's bday and am having about 8 over for cake, dessert etc tonight. No dinner! hooray! and then I start preparing for dinner on Thursday. Since Pete is military we are cooking for all the people in his office that work the 3 shifts on Thanksgiving day. So what this means is that I have to prepare 2 FULL meals. I need to have a meal ready at 11am, 3pm, 5pm and 10pm. So I will cook 2 meals and split them.Pete just told me about this this weeknd AFTER I went to the grocery store. So I sent him out last night to get more food. I am a mad mad woman these next few days. Geffric, I need your helpppppppp But these people are young airman and woman who don't have family in the area. We always have people over on Thanksgiving but this is my first expereience with delivery dinners. His old job didn't have 24 hr shifts. New times!!

So have a great holiday everyone...OF, Geffric, ibounce, Cadsmom, the BELLES, Mad, CG,(btw heard YOUR commercial the other day!!), 39CINDY,Hugs4eyeore, LEW, TB, DHB, slo and all the others I may have forgotten.

Good luck with the meals. That is very sweet, albeit masochistic, for you to do that for those guys. One of my easiest Turkey Day dishes is my cranberry salad which I make by grinding up two bags of cranberries, 4-5 whole oranges (peel and all), and then adding 2 cups of sugar (or as much as you see fit to add). Easy cheesy, and it tastes great! It's really a matter of feel and taste for the amounts of everything. Depends on how much orange you like or how bitter you like it.

Just wanted to pop by with great news...guess who came home for Thanksgiving???? Yep, Sam surprised us yesterday as I was blowing up baloons for the party. She rang the doorbell and Lauren started screaming. Scared the heck out of me!!! My son was in on it for the last few months!!! Now I hate to have to cook all day!! ugh. But we will go out and have fun tonight!!
